CAMPFIRE POTATOES

Just because you're in the middle of the woods doesn't mean that your food needs to lack flavor. These potatoes are grilled to tender perfection with herbs and garlic in an aluminum foil pouch.

Provided by Martha Stewart

Number Of Ingredients 6

2 pounds small potatoes, such as fingerlings or Red Bliss, scrubbed
2 tablespoons extra-virgin olive oil
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
4 sprigs fresh rosemary
6 cloves garlic

Steps:

  • Preheat a grill until medium hot. If necessary, cut potatoes to uniform size to ensure even cooking. In a large bowl, combine potatoes, olive oil, salt, pepper, rosemary, and garlic. Toss to combine.
  • Place potatoes on one half of a 12-by-24-inch piece of heavy-duty aluminum foil. Fold foil over potatoes, and seal, forming a package.
  • Place package on the grill. Grill potatoes until fork-tender, 35 to 45 minutes. Serve.

Tips:

  • Use a cast iron skillet or Dutch oven for even cooking and to create a crispy crust.
  • Cut the vegetables into uniform sizes so they cook evenly.
  • Don't overcrowd the skillet or Dutch oven, or the vegetables will steam instead of roast.
  • Season the vegetables generously with salt and pepper, and add other herbs and spices to taste.
  • Roast the vegetables until they are tender and slightly browned, about 20-30 minutes.
  • Serve the roasted vegetables immediately, or transfer them to a serving dish and keep warm until ready to serve.

Conclusion:

Campfire roasted vegetables are a delicious and easy side dish that can be enjoyed by people of all ages. They are perfect for camping, picnics, or backyard barbecues. With a little planning and preparation, you can create a delicious and memorable meal that your friends and family will love.
