1 large egg
3 back bacons, or peameal - thin slices
2 tablespoons maple syrup
1 montreal style bagel
2 slices canadian cheddar
6 all dressed chips, whole
1 tomato slouse, large

Steps:

  • Preheat oven to 400F
  • In a large non-stick frying pan over medium heat, melt 1 tbsp butter. Crack in egg, season with salt and pepper and fry for 3-4 minutes. Add peameal bacon halfway through, cooking about 1 minute per side. Drizzle maple syrup over top of bacon and egg and continue cooking for an additional 2-3 minutes, flipping bacon to become coated in maple syrup.
  • Cut open the Montreal style bagel and spread each side with remaining salted butter. Place butter side up on a baking sheet. Place a slice of cheddar on each half. Transfer to a 400F oven for 3-4 minutes or until the cheese has melted.
  • Remove from the oven. Stack bacon, egg and tomato on one bagel half, season tomato with salt and pepper. Finally add all dressed chips and top with the remaining bagel half, enjoy!

Been wanting to start making my own and saving it here for safe keeping. I haven't tried this yet. Update: I have made this now after reading Wing Man's review. I have made it several times over the last year or so and it is great. I just never updated.

5 lbs pork loin
1 gallon water
1 1/4 cups mortons tender quick
3 garlic cloves
3 bay leaves
1 1/4 cups brown sugar
1 1/4 ounces gin
1 1/2 tablespoons black peppercorns

Steps:

  • Bring all ingredients except loin to a boil for 10 minutes.
  • Trim fat from loin.
  • Cool the brine to 38 degrees F and strain if desired.
  • Add loin and put a plate on top to keep submerged.
  • Cover,Put in fridge and let sit 7 days turning once at 4 days.
  • Remove and rinse in cold water. Soak for 45 minutes in cool water.
  • Get smoker to 225 Degrees F. Use a good hardwood of choice.
  • For breakfast bacon cook to 145 degrees F.
  • For finished bacon cook to 155-160 degrees F.
  • Cut to desired thickness. 1/4" for me.
  • Keeps in fridge same as commercial bacon.
  • Keeps in freezer longer if left unsliced.

4 English muffins, split, toasted, and cut in half
1/2 pound sliced (about 10 slices) Canadian bacon, halved
1 1/4 cups shredded (5 ounces) sharp cheddar cheese
1/3 cup finely shredded Parmesan cheese
8 large eggs
3 cups milk
1 1/2 tablespoons Dijon mustard
Coarse salt and ground pepper
1/4 teaspoon hot sauce, such as Tabasco

Steps:

  • Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.
  • In a large bowl, whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.
