  • In a blender or food processor, combine the mayonnaise, cream cheese, onion, chives, vinegar, Worcestershire sauce, garlic and seasonings. Cover and process until blended.   • Preheat oven to 400°F.
  • Toast bread on a baking sheet in oven until golden, about 5 minutes. In a bowl stir together remaining ingredients with salt and pepper to taste. Toasts and crab-meat mixture may be made 1 day in advance.

  • In a large bowl, whisk the first 5 ingredients until blended. Pour 1-1/2 cups marinade into a large bowl. Add shrimp and stir to coat. 1/2 of a medium English cucumber, very thinly sliced (~1 cup)
1/2 cup thinly sliced red onion
1/2 teaspoon finely shredded lemon peel
2 teaspoons lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
6 slices firm-textured white bread or 6 slices whole wheat bread
1/4 cup butter or 1/4 cup margarine, softened
1/2 cup sour cream
1 tablespoon snipped fresh chives

Steps:

  • In a bowl combine cucumber, red onion, lemon peel, lemon juice, salt, and ground black pepper; toss gently to coat.
  • If desired, remove crusts from bread slices.
  • Cut each bread slice diagonally into quarters (or use 2 to 2 1/2-inch decorative cutters to cut shapes from bread slices).
  • Spread butter onto one side of each piece of bread; top each with some of the cucumber mixture.
  • In a small bowl, combine sour cream and chives.
  • Spoon a little of the sour cream mixture on top of each canape.

For the brandade de morue
1/2 pound thick-cut skinless boneless salt cod
1/2 cup finely chopped onion
1/3 cup plus 2 tablespoons olive oil
1 garlic clove
1/2 cup heavy cream plus, if desired, 2 tablespoons for thinning the brandade
2 teaspoons fresh lemon juice, or to taste
3 russet (baking) potatoes (about 1 1/2 pounds)
1/4 cup olive oil
1 red bell pepper, roasted (procedure follows), or 1 drained bottled roasted red pepper, chopped fine and patted dry

Steps:

  • Make the brandade de morue:
  • In a ceramic or glass bowl let the salt cod soak in cold water to cover, changing the water several times, for 24 hours and drain it. In a kettle poach the cod in simmering water to cover for 25 minutes, or until it flakes easily when tested with a fork, drain it in a colander, and refresh it under cold water. Pat the cod dry and break it into pieces. In a skillet cook the onion in 2 tablespoons of the oil over moderately low heat, stirring, until it is soft and let it cool. In a food processor puree the onion mixture, the garlic and the cod until the mixture is smooth, with the motor running add the remaining 1/3 cup oil in a stream, 1/2 cup of the cream, the lemon juice, and salt and pepper to taste, and puree the mixture until it is smooth. The brandade de morue may be made 2 days in advance and kept covered and chilled. If desired, thin the brandade with the remaining 2 tablespoons cream.
  • On oiled baking sheets arrange the potatoes, cut crosswise into 1/4-inch-thick slices, without touching, drizzle them with the oil, and roast them in a preheated 400°F. oven, turning them once, for 30 to 40 minutes, or until they are tender, slightly crisp around the edges, and pale golden. Transfer the potatoes to paper towels to drain. Arrange the potato slices on a platter, top each slice with a dollop of the brandade, and top the brandade with the roasted red pepper.
  • To roast peppers
  • Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)

  • In medium bowl, mix oil, lemon juice, honey, lime peel and salt. Add shrimp; toss to coat. Cover and refrigerate at least 30 minutes but no longer than 2 hours, stirring once after half the time.
  • Meanwhile, set oven control to broil. In small bowl, stir butter and marmalade until well mixed. Spread butter over baguette slices.
  • Remove shrimp from marinade; discard marinade. On rack in broiler pan, place shrimp in single layer. Broil with tops 4 to 6 inches from heat 4 to 6 minutes or until shrimp are lightly browned.
  • Place 1 shrimp on each baguette slice. Garnish with cilantro.

1 orange bell pepper
4 tablespoons unsalted butter, room temperature
2 teaspoons whole-grain mustard
2 teaspoons Dijon mustard
1/2 baguette or ficelle, cut into 1/4-inch-thick pieces
1/4 pound jumbo lump crabmeat, picked clean
1/2 celery stalk, strings removed, cut into 1/8-inch-thick slices
1/2 small carrot, peeled and cut into 1/2-inch-long matchsticks
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
Salt and freshly ground black pepper, to taste
2 teaspoons extra-virgin olive oil
1 tablespoon white-wine vinegar
1 tablespoon fresh marjoram leaves, for garnish

Steps:

  • Heat a grill to hot, or turn on the broiler. Cook bell pepper until it is completely charred, turning so all sides cook evenly, 8 to 10 minutes. Transfer warm pepper to a small bowl, cover with plastic wrap, and set aside until cool.
  • Using your hands, rub off charred skin. Slice pepper in half, and remove seeds and stem. Cut pepper into diamond shapes that are slightly larger than a piece of baguette.
  • Using a wooden spoon, mix together butter and two mustards in a small bowl until well combined. Spread a generous dollop of mustard butter on each slice of bread.
  • Place remaining ingredients except marjoram in a medium bowl, and toss to combine. Place a pepper diamond on each piece of bread, and top with a mound of crab salad. Garnish each canape with several marjoram leaves, and serve.

1 (5 ounce) jar Cheese Whiz
1/2 teaspoon garlic salt

  • Soften butter and cheese at room temperature.
  • Blend cheese, butter and salts, add crabmeat.

  • Then, place on a baking sheet and thaw for 10 minutes before baking/broiling.

4 cups milk
1 clove garlic, peeled
6 sprigs fresh thyme, plus more for garnish
1 small potato, peeled and quartered
2 tablespoons heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 tablespoons freshly grated horseradish, or to taste
1 baguette (12 inches long), sliced into 1/4-inch-thick slices on the diagonal
1 tablespoon olive oil

Steps:

  • Place the smoked haddock in a large bowl, and cover with cold water. Soak fish 4 hours, changing water every 30 minutes. Alternatively, keep bowl under a thin stream of constantly running water. If using salt cod, soak the fish 12 hours.
  • Remove haddock from water; discard any bones. Transfer fish to saucepan. Add milk, garlic, thyme and potato. Set over medium-low heat; simmer until haddock is very soft, about 1 hour. Pour mixture through a sieve set over bowl; discard thyme and milk. Transfer solids to a large bowl.
  • Heat the oven to 400 degrees. Using a fork, gently mash the haddock, potato, and garlic together, adding enough cream to make a thick paste. Add the salt and pepper, and stir in the horseradish.
  • Place the bread slices on a baking sheet, and toast until golden. Brush toast with olive oil, and spread fish paste on top. Garnish servings with the fresh thyme.

1 lb cooked medium shrimp (I buy the frozen, pre-cooked)
1 cup Italian salad dressing
1/2 pint sour cream
1 -2 large peeled cucumber
1 box garlic melba rounds

Steps:

  • Marinated cooked shrimp for 1 hour in dressing in the refrigerator.
  • Drain and place shrimp on individual slices of cucumbers then place this on the Melba Rounds and top with dabs of sour cream.
  • Arrange on serving dish and refrigerate until ready to serve.

4 cups plain yogurt
1 beef tenderloin roast (1-1/2 pounds)
2 tablespoons olive oil, divided
1 teaspoon salt, divided
1/4 teaspoon plus 1/8 teaspoon white pepper, divided
1 medium cucumber, peeled, seeded and diced
1 tablespoon finely chopped onion
1 garlic clove, minced
1 tablespoon white vinegar
1 French bread baguette (1 pound), cut into 36 thin slices
1 cup fresh arugula
Sliced grape tomatoes, optional

Steps:

  • Line a fine mesh strainer with two layers of cheesecloth; place over a bowl. Place yogurt in strainer. Cover and refrigerate for at least 4 hours or overnight., Rub tenderloin with 1 tablespoon oil. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon white pepper. In a large skillet, cook tenderloin over medium-high heat until browned on all sides. Transfer to a shallow roasting pan. , Bake at 400° for 25-30 minutes or until a thermometer reads 145°. Cool on a wire rack for 1 hour. Cover and refrigerate., Transfer yogurt from strainer to another bowl (discard yogurt liquid). Add the cucumber, onion, garlic and remaining salt and white pepper. In a small bowl, whisk the vinegar and remaining oil; stir into yogurt mixture., Thinly slice the tenderloin. Spread yogurt mixture over bread slices; top with beef, arugula and tomato slices if desired. Serve immediately or cover and refrigerate until serving.

1 (1 1/2-pound) live lobster
2 thick seedless cucumbers (usually plastic-wrapped; at least 1 3/4 inches in diameter), cut into 36 (1/4-inch-thick) slices
2 tablespoons mayonnaise
2 to 3 teaspoons fresh lime juice
1 1/2 teaspoons minced fresh jalapeño chile (including seeds)
1/4 teaspoon salt
1/3 cup finely diced peeled mango
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
2 tablespoons finely chopped fresh cilantro
Garnish: thinly sliced fresh cilantro

Steps:
