CANDIED YAMS WITH CRANBERRIES

Candied Yams with Cranberries image

This is a delicious variation on candied yams. The fresh cranberries add a slight tartness that cuts down on the sweetness characteristic of traditional candied yams. This recipe was taken from a bag of miniature marshmallows many years ago and I recently re-discovered it. Hope you like it as much as I do!

Tips:

  • Choose firm yams with smooth skin and no blemishes.
  • Peel and cut the yams into even-sized pieces to ensure even cooking.
  • Soak the yams in cold water for 30 minutes before boiling to remove any excess starch.
  • Boil the yams until they are tender but not mushy. Overcooked yams will become watery and lose their shape.
  • Use a potato masher or ricer to mash the yams until smooth. Avoid using a blender or food processor, as this will make the yams too gluey.
  • Add the butter, milk, spices, and sugar to the mashed yams and mix until well combined. Taste and adjust the seasoning as needed.
  • Transfer the yam mixture to a greased baking dish and top with the pecan topping.
  • Bake the casserole in a preheated oven until the topping is golden brown and the yams are bubbly.
  • Serve the casserole hot, garnished with additional chopped pecans if desired.

Conclusion:

Candied yams casserole with pecans is a classic holiday dish that is sure to impress your guests. With its sweet and savory flavors, it is a perfect side dish for any roasted meat or poultry. The pecan topping adds a delicious crunch and nutty flavor that takes this casserole to the next level.
