Yield Makes 6 one-quart jars

Number Of Ingredients 3

18 pounds ripe tomatoes
2 tablespoons salt
12 fresh basil leaves

Steps:

  • Bring a large pot of water to a boil, and blanch tomatoes, in batches, for 30 seconds. When cool enough to handle, peel, core, and halve. Work over a strainer set over a bowl to catch the juices, and remove the seeds.
  • Add 1 teaspoon salt and 2 basil leaves to each jar. Place tomatoes, cut sides down, in jars. Use a knife or spatula to remove air bubbles or extra space. Press down on the tomatoes to compact, and fill jars with the reserved tomato juice to within 1/2 inch of the rim. Wipe the rim, put on a hot lid and screw top, and transfer jars to the hot water. Repeat until all jars are filled and water covers them by 1 to 2 inches. Bring water to a boil, cover, and process for 45 minutes. Remove jars from pot, and let cool 24 hours. Test seals.

SMOKED SALMON DEVILED EGGS AND TOMATOES

Smoked Salmon Deviled Eggs and Tomatoes image

I found this awesome spice called smoked paprika. I had a request by my sister-in-law to make some deviled eggs. I had a can of salmon in the pantry and decided to try it with another favorite deviled egg recipe. The result was a huge hit.

Time 2h

Yield 20

Number Of Ingredients 13

12 eggs
10 cherry tomatoes, halved and seeded
4 ounces cream cheese, softened
1 (6 ounce) can skinless, boneless salmon, drained and flaked
2 tablespoons mayonnaise
2 tablespoons spicy brown mustard
1 ½ tablespoons sour cream
1 tablespoon lemon juice
2 tablespoons pickle relish, drained
¼ teaspoon grated lemon peel, or to taste
1 teaspoon smoked paprika
salt and pepper to taste
smoked paprika for garnish

  • Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Remove from the heat and let the eggs stand in the hot water for 15 minutes. Drain. Cool the eggs under cold running water. Peel once cold. Halve the eggs lengthwise and scoop the yolks into a bowl. Mash the yolks with a fork.
  • Place the tomatoes, cut sides down, onto a paper towel to drain.
  • Mash the cream cheese with a spoon in a bowl until smooth and workable; stir in the egg yolks, salmon, mayonnaise, brown mustard, sour cream, lemon juice, pickle relish, lemon peel, and 1 teaspoon of smoked paprika until well combined. Season with salt and pepper.
  • Spoon the salmon mixture into the egg halves and cherry tomato halves. Sprinkle with additional smoked paprika for garnish and arrange on a platter. Chill at least 1 hour before serving.

Provided by Food Network Kitchen

Time 2h10m

Yield 6 servings

Number Of Ingredients 3

8 plum tomatoes (about 2 pounds), halved and seeded
Kosher salt and freshly ground pepper
4 sprigs rosemary or thyme

Steps:

  • Soak the wood chips in water 1 hour, then prepare your grill for smoking.
  • Season the tomatoes with salt and pepper. Divide the herbs between the disposable pie pans, then add the tomatoes, cut-side down.
  • Once the grill reaches 250 degrees F, place the pans with the tomatoes on the cooler side of the grill. Close the grill and let smoke until the tomatoes are tender, 30 to 40 minutes. If using a gas grill, turn off the flame and let the tomatoes sit 10 more minutes (this is not necessary if using charcoal; it imparts more smoky flavor). Remove from the grill and serve hot or at room temperature.

Tips:

  • Choose ripe, flavorful tomatoes. This will ensure that your canned smoked tomatoes have the best possible flavor.
  • Smoke the tomatoes before canning them. This will give them a delicious smoky flavor that is perfect for use in a variety of dishes.
  • Use a variety of spices and herbs to flavor the tomatoes. This will help to create a complex and flavorful canned tomato product.
  • Process the tomatoes in a water bath canner. This will ensure that they are safely preserved and can be stored for up to a year.

Conclusion:

Canned smoked tomatoes are a delicious and versatile pantry staple. They can be used in a variety of dishes, from soups and stews to sauces and pasta dishes. They are also a great way to add a smoky flavor to your favorite recipes. If you are looking for a way to preserve your summer tomato harvest, canning smoked tomatoes is a great option.
