PRIZE-WINNING PEACH PIE

Prize-Winning Peach Pie image

As a beginning cook, I especially liked to practice making pies. Peaches are probably my favorite fruit (but only when in season), so it was a pie I practiced often. I finally got up the nerve to enter a local Grange Fair, and was so surprised to win! That was great encouragement for a novice pie maker.

Tips:

  • Select ripe and flavorful peaches: Choose peaches that are fragrant and have a slight give when pressed gently. Avoid peaches that are too soft or have bruises.
  • Peel and slice the peaches thinly: This will help them cook evenly and quickly.
  • Use a combination of spices: The spices in this recipe, such as cinnamon, nutmeg, and ginger, add warmth and depth of flavor to the pie filling.
  • Don't overcook the filling: The filling should be thick and bubbly, but not too dry. Overcooking can result in a tough and chewy filling.
  • Use a pre-made pie crust or make your own: If you're using a pre-made crust, be sure to thaw it according to the package directions. If you're making your own crust, follow a reliable recipe and chill the dough before rolling it out.
  • Brush the edges of the pie crust with milk: This will help the crust brown evenly.
  • Bake the pie until the crust is golden brown and the filling is bubbling: Use a toothpick to check the doneness of the filling. It should come out clean or with just a few moist crumbs attached.
  • Let the pie cool slightly before serving: This will allow the filling to set and the flavors to meld.

Conclusion:

Captain Jack's Peach Pie is a classic dessert that is perfect for any occasion. With its sweet and juicy peaches, warm spices, and flaky crust, this pie is sure to be a hit with everyone.
