6 bone in chicken thighs
2 bone in legs
2 bone in breasts
5 tablespoons chicken seasoning
2 ⅔ cups glaze, recipe below
2 cups Carolina style BBQ sauce ((see notes for our recipe))
⅔ cup honey

Steps:

  • Trim meat of excess fat, and pat dry. Apply dry rub all over the chicken pieces and place in a refrigerator overnight or at least 4 hours uncovered to dry brine.
  • Preheat smoker to 275 degrees Fahrenheit (F) using fruit wood like apple or cherry. Oak and Hickory also work well.
  • Place chicken pieces in the smoker until the internal temperature of the chicken reaches 150 degrees F in the breast and 160 degrees in the thighs.
  • Dip the chicken pieces into the bowl of glaze and place back onto the smoker. Continue smoking until the internal temperature of the chicken reaches 160 degrees F using a good instant read thermometer for the breast and 170 degrees for the thighs.
  • Remove from the smoker and then dip again into your glaze, let it rest for 10 minutes allowing glaze to set.
  • Serve and enjoy.

2 teaspoons finely grated orange peel
2 tablespoons orange marmalade
2 teaspoons olive oil
1 tablespoon fresh snipped thyme
2 1/2 teaspoons ground coriander
1/8 teaspoon ground red pepper
1/4 teaspoon salt
1 small ruby red grapefruit
2 ripe firm kiwi
2 medium ripe nectarines
2 ripe firm star fruit
4 medium boneless skinless chicken breast halves

Steps:

  • Combine orange peel, orange marmalade, oil, thyme, coriander, red pepper and salt in a small bowl and set aside.
  • Peel and quarter grapefruit and kiwi.
  • Pit and quarter nectarines. Cut star fruit into 1/2 inch thick slices.
  • Thread fruits on 4 metal skewers.
  • Grill chicken directly over medium heat for 12 to 15 minutes until chicken is no longer pink, turning once.

1 cup lemon juice
¼ cup vegetable oil
¼ cup vinegar
1 tablespoon dried oregano
2 teaspoons garlic powder
1 whole chicken, cut into pieces
salt and pepper to taste

Steps:

  • In a large glass bowl mix lemon juice, vegetable oil, vinegar, oregano, and garlic powder. Place chicken pieces in the bowl, and season with salt and pepper. Cover, and marinate in the refrigerator at least 1 hour.

1 lb shallots, finely chopped (2 3/4 cups)
1/4 cup olive oil
1 cup distilled white vinegar
1 cup canned tomato purée
1/2 cup mild honey
1/4 cup steak sauce such as A.1.
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
1/4 teaspoon black pepper
1 (3- to 3 1/2-lb) chicken, split in half
Accompaniments: 8 (7-inch) flour tortillas or a baguette; green salad

Steps:

  • Cook shallots in oil in a 4-quart heavy pot over moderately low heat, covered, stirring occasionally, until soft, 12 to 14 minutes (reduce heat to low if shallots begin to brown). Stir in vinegar, tomato purée, honey, steak sauce, Worcestershire, salt, and pepper and bring to a boil. Remove sauce from heat and reserve 1 1/2 cups for basting and 1 cup for serving. Cool sauce to room temperature before brushing on chicken (sauce will thicken as it cools).
  • Remove excess fat from chicken and pat chicken dry. Brush all over with some barbecue sauce and season with salt and pepper.
  • To cook chicken using a charcoal grill:
  • Open vents on bottom of grill and on lid. Light a large chimney of charcoal briquettes (about 100) and pour them evenly over 1 side of bottom rack (you will have a double or triple layer of charcoal).
  • When charcoal turns grayish white (15 to 20 minutes from lighting) and you can hold your hand 5 inches above top rack for 3 to 4 seconds, sear chicken on lightly oiled grill rack over coals, uncovered, turning, until well browned, about 3 minutes total.
  • Move chicken to side of grill with no coals underneath, arranging skin sides up, then cook, covered with lid, brushing with sauce and turning every 10 minutes, until cooked through, 45 minutes to 1 hour.
  • To cook chicken using a gas grill:
  • Preheat all burners on high, then adjust heat to moderate. Sear chicken on lightly oiled grill rack, uncovered, turning, until well browned, about 10 minutes total. Adjust heat to low, then cook chicken, covered with lid, brushing with sauce and turning every 10 minutes, until cooked through, about 25 minutes.
  • Serve chicken with reserved cup sauce.

2 (3 1/2 lb) roasting chickens, quartered
1 cup vegetable oil
3/4 cup white wine vinegar
1/2 cup dry sherry
1 teaspoon minced garlic
1/2 teaspoon poultry seasoning
2 teaspoons caribbean seasoning (see my recipe for Caribbean Seasoning)
2 carambolas, sliced
1/4 cup lime juice
1/4 cup honey
2 tablespoons white wine vinegar
1 tablespoon soy sauce
1 tablespoon minced garlic
1 dash hot pepper sauce
3 -4 carambolas, sliced

Steps:

  • Place chicken quarters in shallow dish.
  • In a bowl, stir together oil, vinegar, sherry, garlic, and poultry seasoning, and 1 teaspoons of Caribbean seasoning.
  • Pour off 1 cup of this mixture, and set it aside.
  • Pour the rest of the mixture over the chicken.
  • Cover and refrigerate for 2-3 hours.
  • Prepare grill.
  • Put the carambolas into a blender or food processor.
  • Add lime juice,honey,vinegar,soy sauce, garlic, hot pepper sauce, and remaining 1 teaspoons Caribbean seasoning.
  • Whirl until the mixture is smooth, stopping to scrape down sides.
