To me, this is the purest and most intensely flavored apple pie recipe there is. The interesting thing about this recipe is the way the caramel sauce is poured over the apples and the lattice crust. You know how with a traditional apple pie some of the apple juices will caramelize as it bakes and bubble out of the pie and bake into and onto the flaky crust? That's how this whole pie is.

6 tablespoons unsalted butter
½ cup white sugar
½ cup brown sugar
¼ cup water
¼ teaspoon cinnamon
1 pinch salt
5 apples - peeled, cored and sliced
1 pastry for double-crust pie (see footnote for recipe link)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine butter, white sugar, brown sugar, water, cinnamon, and salt in a saucepan over medium heat. Bring to a boil, remove from heat and set aside.
  • Roll out half the pastry to fit a 9-inch pie plate. Place bottom crust in pie plate; pour in apple slices.
  • Roll out top crust into a 10-inch circle. Cut into 8 (1-inch) wide strips with a sharp paring knife or pastry wheel. Weave the pastry strips, one at a time, into a lattice pattern. Fold the ends of the lattice strips under the edge of the bottom crust and crimp to seal.
  • Pour butter-sugar mixture over top of pie, coating the lattice, and allowing any remaining sauce to drizzle through the crust.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake until the crust is golden brown, the caramel on the top crust is set, and the apple filling is bubbling, 35 to 40 more minutes. Allow to cool completely before slicing.

  • To make dulce de leche, place the unopened can of sweetened condensed milk in a saucepan, and add enough water to cover half-way up the can. Place the saucepan over medium-high heat and bring to a boil. Cook for 3 hours, adding more water as necessary. Remove from heat and cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the graham cracker crumbs with the butter in a mixing bowl until evenly blended. Press the crumb mixture evenly into a 9 inch pie plate.
  • Bake pie crust in preheated oven until lightly browned, 10-15 minutes. Remove from oven, and cool on a wire rack.
  • Open the can of dulce de leche, and pour half, or about 3/4 cup, over the pie crust. Slice the bananas and arrange half in a layer over the dulce de leche filling. Pour the remaining dulce de leche over the bananas. Top with remaining banana slices.
  • Pour the whipping cream into a mixing bowl, and beat until soft peaks form. Add the sugar and vanilla extract; continue beating until stiff peaks form. Spoon the whipped cream over the bananas. Chill at least 1 hour before serving.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).

2 ½ cups all-purpose flour
½ teaspoon salt
1 cup cold shortening
6 tablespoons ice water, or as needed
½ cup unsalted butter
3 tablespoons all-purpose flour
½ cup white sugar

¼ cup water
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 pinch ground nutmeg
⅓ cup butter
½ cup firmly packed brown sugar

8 Granny Smith apples - peeled, cored and thinly sliced

Steps:

  • Whisk 2 1/2 cups flour and salt together in a bowl. Cut in shortening with 2 knives or pastry blender until the mixture resembles coarse crumbs. 6 cups thinly sliced peeled tart apples
1/3 cup light corn syrup
1/4 cup sugar

1 lemon, juiced
½ cup granulated sugar
½ cup brown sugar
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 prepared pie dough

Steps:

  • Peel the apples and place them in a large bowl with enough water to cover. Squeeze lemon juice in the water to prevent the apples from browning. Working with 1 apple at a time, cut around the core, discarding the core and removing the "cheeks." Slice the cheeks very thin.
  • In a large bowl, combine the granulated sugar, brown sugar, cinnamon and nutmeg. Stir to combine. Add the sliced apples, stir to coat, and let sit for 30 minutes.
  • Line a pie dough in a 9-inch (23-cm) cast-iron pan, and prick the dough with a fork all around. Chill in the fridge until very firm, 20-30 minutes.
  • Working in batches, remove the apples from the cinnamon-sugar mixture by taking a handful at a time and carefully squeezing them with your hands to remove the excess moisture. Place the drained apples in a separate large bowl, reserving the liquid to make the caramel sauce.
  • Preheat the oven to 375˚F (190˚C).
  • Working from the outside in, line the apple slices on the pie dough by overlapping each slice to create a rose shape. Roll up 1 apple slice tightly and place it in the center, creating a bud shape. Cover the pan with foil and bake for 30 minutes. Uncover and bake for 10 minutes more, or until golden brown. Remove from the oven and let cool for 10 minutes.
  • In a saucepan, bring the reserved cinnamon-sugar liquid to a boil. Once the liquid is reduced by half, 10-15 minutes, add the heavy cream and stir well.

3 pounds (6 to 7) baking apples, peeled, cored, and cut into 1/2-inch slices
1/2 cup sugar
2 tablespoons lemon juice (from 1 lemon)
3/4 teaspoon coarse salt, plus more for top

Steps:

  • Preheat oven to 375°F with a rack in center and a large sheet of foil on rack below.   • Bake until crust is golden on bottom and juices are bubbling in center, 1 hour and 20 minutes to 1 hour and 30 minutes. If browning too quickly, tent top or edges with foil. Let cool completely on a wire rack, about 4 hours. Serve slices with vanilla ice cream drizzled with remaining caramel (reheated in pan over low heat or in microwave) and sprinkled with flaky salt.

3 sticks unsalted butter, cut into 1/2 in (1.24 cm) and frozen for 15 minutes
¾ cup water, ice water, plus more as needed
1 large egg, with 1 tablespoon water
2 tablespoons unsalted butter
3 lb Granny Smith applesGranny Smith apples, peeled and sliced into ¼-inch (6 mm) wedges
3 lb honeycrisp apple, peeled and sliced into ¼-inch (6 mm) wedges
1 lemon
1 ½ cups brown sugar
1 teaspoon kosher salt
1 tablespoon pumpkin pie spice
1 ½ teaspoons vanilla bean paste
¼ cup cornstarch
3 tablespoons water
1 cup apple cider
1 ½ cups granulated sugar
⅓ cup water
1 tablespoon light corn syrup
¾ cup heavy cream, room temperature
½ teaspoon kosher salt
pecan, candied chopped, for garnish

Steps:

  • Make the pie dough: In a large bowl, mix together the flour and salt. Add the butter and toss to coat each cube with the flour, then smash each piece of butter with your fingers.
  • Add the ice water, 1-2 tablespoons at a time, and continue to toss until the dough holds together when pressed between your hands. You may not need all of the water, but if the dough is too dry, add more, 1 teaspoon at a time, as needed. The dough should not be very tacky or sticky.

1 prepared vanilla wafer pie crusts or 1 graham cracker crust

1 1/2 cups whipping cream (unwhipped)
3 -4 tablespoons powdered sugar (or use granulated sugar)
1 1/2 teaspoons vanilla
1 cup chopped Skor candy bar (or 3 regular-size Skor chocolate bars, or use Skor baking bits)

Steps:

  • Layer the banana slices evenly over the bottom of the prepared crust.
