2 shells pie dough, thawed and prepared
1 medium egg, beaten
¼ cup unsalted butter, 1/2 stick
1 cup brown sugar
1 teaspoon vanilla
½ teaspoon salt
¼ cup honey

Steps:

  • On a cutting board peel and cut the apples into slices ¼-inch (6-mm) thick.

1/2 cup heavy cream
1 tablespoon salted butter
Two 9-inch unbaked, unrolled pie crusts
1 to 2 Granny Smith apples, peeled, cored, and diced into 1/4-inch cubes (about 1 cup)
Couple pinches ground cinnamon
1 egg, beaten
1/4 cup demerara sugar

Steps:

  • Pour the sugar and 1/2 cup of water into a small saucepot, trying to keep the sugar in the middle of the pot to avoid crystallization on the sides. Bring to a boil and cook until the syrup is thick and pecan brown, 15 to 20 minutes.

1/2 teaspoon baking powder

2 teaspoons fresh lemon juice
1/2 teaspoon cinnamon
1/4 cup sugar
2 teaspoons all-purpose flour
8 store-bought soft caramels, roughly chopped
1 large flake sea salt (See Kelly's Notes)
egg wash (1 egg lightly whisked with 1 Tablespoon water)
sugar (crystal sanding) (optional)

Steps:

  • Make the dough:.
  • Whisk together the flour, salt and baking powder in a large bowl.

2 cups peeled and diced Granny Smith apples (about 3 apples, diced small)

8 -10 store-bought soft caramels, rough chopped
2 teaspoons fresh lemon juice
