Time 4h

Number Of Ingredients 20

2/3 cup sea salt
1 cup cane sugar
2 teaspoons white pepper
2 tablespoons lemon zest
2 tablespoons Meyer lemon zest
2 salmon fillets approximately 12 to 14 ounces each
1 small head of cauliflower
2 tablespoons grapeseed oil
Salt and pepper to taste
2 tablespoons chicken glaze, recipe follows
1/4 cup lemon juice (1/2 Meyer lemon, 1/2 regular)
3 to 4 tablespoons extra virgin lemon oil
Salt and pepper to taste
1/2 cup parsley leaves
1/2 cup chervil leaves
1/3 cup chives cut in 1/2-inch pieces
1/3 cup carrot tops cut in 1/2-inch pieces
1 teaspoon regular lemon zest
2 tablespoons reserved chopped cauliflower
2 quarts rich chicken stock

Steps:

  • Combine the salt, sugar and pepper in a small mixing bowl. Combine both lemon zests and coat the salmon fillets with the zest. Pour a thin layer of salt/sugar mixture on a cookie sheet limed with parchment. Place the salmon fillets on the salt/sugar mix. Pour the remaining mixture over the salmon. Time 4h20m

Yield 4 serving(s)

Number Of Ingredients 14

1/4 cup basil, finely chopped
2 tablespoons finely grated fresh ginger
4 (7 ounce) salmon fillets, skinless and boneless
1/4 cup soy sauce
1/4 cup orange liqueur (Triple Sec)
2 tablespoons fresh grated orange rind
1 shallot, minced
3 tablespoons olive oil
1 teaspoon black pepper
1/4 cup sugar
1/4 cup brown sugar
1 tablespoon butter
1/4 cup marsala
orange slice

Steps:

  • Combine basil and ginger.
  • Coat the salmon fillets with basil/ginger mixture on both sides and refrigerate for at least 4 hours or overnight.
  • When ready to cook for serving, combine the soy sauce, orange liqueur, orange rind, and shallot in a bowl; set aside.
  • Heat olive oil in a skillet over medium-high heat.
  • Combine the black pepper and sugars in a shallow dish.
  • Press one side of the salmon fillets into the mixture, then sauté the fillet, sugar-side-down, to caramelize the sugars, for about 2 to 3 minutes.
  • Then quickly pour the soy mixture into the pan before the sugar burns, stirring to dissolve any caramelized bits floating around the pan.
  • Turn the fillets over and lower the heat to medium; cover the pan and cook for 5 to 8 minutes longer, until fillets are cooked through (they will be dark pink in the middle).
  • Remove fillets from skillet and place on serving platter; melt the butter in the pan then add the Marsala, stirring the bottom with a wooden spatula, and simmer for 3 minutes to deglaze the pan, then pour over the fillets.
  • Decorate with orange slices, serve, and enjoy!

SALTY-SWEET BARBECUE SALMON AND BROCCOLI

Salty-Sweet Barbecue Salmon and Broccoli image

This salmon and broccoli sheet-pan dinner gets a boost from bottled oyster sauce, which is made from caramelized oyster juices, salt and sugar, and tastes like a sweet yet briny soy sauce. It makes the perfect base for a rich barbecue sauce that comes together in just 10 minutes. Caramelized sugar, tomato paste and soy sauce quickly create depth, while vinegar balances the sweetness. The salty-sweet sauce complements the buttery salmon and does double duty as a glaze and finishing sauce. It also serves as a terrific marinade for chicken and steak, so you may want to make a double batch of it.

Time 30m

Yield 4 servings

Number Of Ingredients 14

1 pound broccoli florets, cut into 1-inch pieces (about 8 cups)
12 scallions, trimmed and halved crosswise
1 (1-inch) piece fresh ginger, peeled and julienned (about 1 1/2 tablespoons)
1/4 cup safflower or canola oil
Kosher salt and black pepper
2 tablespoons finely chopped yellow onion
1 tablespoon minced garlic
1 teaspoon tomato paste
3 tablespoons turbinado sugar (or 2 tablespoons light brown sugar)
6 tablespoons oyster sauce
2 tablespoons unseasoned rice vinegar
1 tablespoon low-sodium soy sauce
4 (6-ounce) skin-on salmon fillets
Steamed rice, for serving

Steps:

  • Heat oven to 450 degrees. On a rimmed baking sheet, combine broccoli, scallions, ginger and 2 tablespoons oil. Season with salt and pepper, and toss to coat. Spread in an even layer and roast until softened, about 15 minutes.
  • While the broccoli mixture roasts, prepare the oyster barbecue sauce: In a small saucepan, heat the remaining 2 tablespoons oil over low. Add onion and garlic, and cook until softened, about 2 minutes. Add tomato paste and cook, stirring frequently, for 1 minute. Add sugar and cook, stirring, until sugar dissolves and the mixture darkens slightly, about 3 minutes. Stir in 1/2 cup water (be careful, as the mixture may splatter a little), then the oyster sauce, vinegar and soy sauce. Bring to a simmer. (The sugar may seize, but keep stirring; it will dissolve.) Cook, stirring, until sauce is thickened, about 5 minutes. Season generously with pepper. Remove 1/2 cup and set aside for passing at the table.
  • Stir the roasted broccoli. Season salmon with salt and arrange on top of the broccoli. Liberally brush salmon all over with half of the remaining oyster barbecue sauce in the saucepan. Roast until the vegetables are caramelized and the salmon is cooked through, 8 to 10 minutes, basting salmon after 5 minutes with the barbecue sauce.
  • Divide salmon and vegetables among plates. Serve with steamed rice and the reserved barbecue sauce.

Yield makes 2 servings

2/3 cup Easier-Than-Caramelized Onions (see page 225), reheated if necessary

CARAMELIZED BBQ SALMON

Caramelized BBQ Salmon image

This is a healthy and delicious way of cooking fresh salmon - I only use Tasmanian. The source was a weightwatchers recipe book, but I have slightly customised it. The marinade ensures a delicious caramelised coating on the salmon. Serve with some roast potatoes and garden salad for easy, healthy and delicious dinner.

Yield 2 serving(s)

2 (150 g) fresh salmon fillets (ocean trout works equally well)
2 tablespoons lime juice
2 tablespoons thick teriyaki sauce

Steps:

  • Remove the skin from the salmon.
  • Mix the lime juice and teriyaki sauce together.
  • Place the salmon in a bowl and pour the lime mixture on top. Mix thoroughly so that the salmon is coated.
  • Place the salmon in the refrigerator for at least 10 minutes.

  • Serve with roast potatoes and salad.

Tips:

  • Choose the right salmon. Look for wild-caught salmon, as it is generally considered to be healthier and more flavorful than farmed salmon.
  • Use a good quality BBQ sauce. A good BBQ sauce will add a lot of flavor to the salmon, so choose one that you like the taste of. You can also make your own BBQ sauce if you prefer.
  • Caramelize the BBQ sauce. This will give the sauce a richer, deeper flavor. To caramelize the sauce, simply simmer it in a saucepan over low heat until it thickens and turns a deep brown color.
  • Don't overcook the salmon. Salmon is a delicate fish, so it is important to cook it carefully. Overcooked salmon will be dry and tough, so cook it just until it is opaque in the center.
  • Serve the salmon immediately. Caramelized BBQ salmon is best served immediately, while it is still hot and flaky. You can garnish it with fresh herbs, such as cilantro or parsley, if desired.

Conclusion:

Caramelized BBQ salmon is a delicious and easy-to-make dish that is perfect for a summer cookout. The salmon is cooked on the grill until it is flaky and tender, then basted with a caramelized BBQ sauce. The result is a dish that is full of flavor and sure to please everyone at your party.
