1/2 head red cabbage, thinly sliced
4 limes, juiced
2 tablespoons sriracha
1 teaspoon kosher salt, plus more for seasoning
1/4 teaspoon ground black pepper, plus more for seasoning
2 fresh mangos
1 bunch scallions, green and white parts, thinly sliced
4 sprigs mint, leaves torn
2 pounds ground beef
3 tablespoons teriyaki sauce
1 tablespoon sriracha
1 tablespoon grated fresh ginger
3 cloves garlic, finely grated
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
6 brioche hamburger buns, toasted
Vegetable oil, as needed
Mayonnaise, as needed
6 leaves green leaf lettuce
1 avocado, peeled and thinly sliced

Steps:

  • For the slaw: Toss the cabbage with the lime juice, sriracha, salt and pepper in a large bowl. Cover and chill until ready to serve.

1 ripe pineapple, peeled and cut 1/2-inch thick
1 onion, peeled and cut 1/2-inch thick
1/3 cup honey
1/4 cup red wine vinegar
1 tablespoon grated orange peel
1 tablespoon grated fresh ginger, root peeled
1/4 teaspoon tsps ground allspice
1/4 cup red bell pepper, minced
1 1/4 lbs extra lean ground turkey
1 1/2 teaspoons jerk seasoning
1/2 teaspoon black pepper
2 tablespoons canola oil, divided
4 burger buns, split and toasted

Steps:

  • Brush pineapple and onion slices with 1 1/2 tablespoon oil. Grill over medium-high heat until light brown on both sides; cool. Discard pineapple core. Mince pineapple and onion.
  • Combine next five ingredients in saucepan. Simmer, covered for 45 minutes. Add red pepper and cook for 10 minutes; cool and reserve.

1 tablespoon olive oil
1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
2 cloves garlic, minced
1 cup salsa
1 (15.25 ounce) can whole kernel corn, drained
1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
⅓ cup dry bread crumbs
6 (10 inch) flour tortillas
6 tablespoons sour cream
2 cups shredded lettuce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
  • Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
