EASTERN NORTH CAROLINA BBQ SAUCE

Eastern North Carolina BBQ Sauce image

I have tried a lot of recipes of Eastern North Carolina BBQ Sauce. This is the closest to what you will find in any of the BBQ Restaurants here in North Carolina. It is on the hot side, so you may wish to adjust the cayenne pepper and Tabasco™ sauce for milder flavor.

1 tablespoon ground cumin
2 teaspoons chile de arbol
2 racks St. Louis-style pork ribs, 12 ribs each, membrane removed
1/4 cup canola oil
2 cups cider vinegar
2 tablespoons light brown sugar
1/2 teaspoon cayenne powder
Few dashes hot pepper sauce (recommended: Tabasco)
1 tablespoon kosher salt
1/4 teaspoon freshly ground black pepper
Mix of hickory and applewood chips
1 quart apple cider
North Carolina Barbecue Sauce, recipe follows
1/4 cup canola oil
2 medium Spanish onions, coarsely chopped
6 cloves garlic, coarsely chopped
2 cups ketchup
2/3 cup water
1/4 cup ancho chili powder
2 tablespoons paprika
2/3 cup Dijon mustard

2 tablespoons Worcestershire sauce
2 canned chipotle chiles in adobo, chopped
1/4 cup dark brown sugar
2 tablespoons honey
2 tablespoons molasses
Kosher salt and freshly ground black pepper

Steps:

  • For the rub:
  • Combine all the spices in a small bowl. Brush both sides of the racks with oil and rub with the spice mixture. Wrap in plastic and refrigerate for at least 12 hours.
  • In a large pot over low heat, add all the mop ingredients. Bring to a simmer and cook until the sugar is dissolved. Let cool to room temperature.
  • Remove the ribs from the refrigerator 45 minutes before smoking to allow them to come to room temperature. Add the mix of hickory and applewood chips to the smoker according to package instructions. Heat a smoker to 220 degrees F. Put the apple cider in a small heatproof pan in the smoker.
  • Put the ribs directly on the smoker rack. Smoke for 6 hours, brushing the ribs with the mop every hour for the first 5 hours. During the last hour, brush the ribs with the North Carolina Barbecue Sauce every 10 minutes. Remove the ribs to a serving platter and serve.
  • For the BBQ Sauce:
  • Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onions and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Stir in the ketchup and water, bring to a boil and simmer for 5 minutes. Add the remaining ingredients and simmer until thickened, stirring occasionally, about 10 minutes. Cool for about 5 minutes.
  • Carefully transfer the mixture to a food processor and puree until smooth. Season with salt and pepper, to taste, then pour into a bowl and allow to cool at room temperature. Sauce will keep for 1 week in the refrigerator, stored in a tightly sealed container.

CAROLINA BBQ GOLD SAUCE

Carolina BBQ Gold Sauce image

A slightly sweet, mustard-based barbecue sauce popular in South Carolina for use when grilling or roasting chicken and pork. Recipe is for a mild version - with an optional Hot version. If you like really browned chicken, start basting early; otherwise, baste frequently after the first 30 minutes of grilling. For crockpot BBQ, add 1 cup of sauce the crockpot with Boston butt, and cook until very tender. Remove and discard excess fat from pork. Chop or shred pork, place in buns, and serve with extra sauce.(serving=1/4 cup)

Yield 1 quart, 16 serving(s)

2 tablespoons molasses

1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves

2 -3 teaspoons louisianna hot sauce (optional)

Steps:

  • In saucepan, whisk together all dry ingredients.
  • Add mustard, tomato paste, and molasses.
  • Slowly add vinegar, whisking till blended.
  • Add water and whisk to blend.
  • Heat over medium-low heat till hot; lower to simmer and simmer 30-45 minutes.
  • Cool, then pour into glass bottle or other non-reactive container.
  • Refrigerate, if desired.
  • Our favorite way to use this sauce (1) poured over chopped pork on buns or (2) to baste bone-in chicken when grilling.
  • The sooner you baste, the more browned the chicken gets, and we like it browned and charred (not burned), so we baste early and frequently.

CAROLINA STYLE MUSTARD BBQ SAUCE

Carolina Style Mustard BBQ Sauce image

Every BBQ novice (experts, too) should buy Mike Mills' book "Peace, Love, & BBQ" for recipes and BBQ lore... what a fun read and window into many regional favorites. Mike is certainly confident (and its justified): he declares that HIS Carolina Style Mustard BBQ Sauce would be used by the legendary Maurice Bessinger (SC BBQ restauranteur) if only he had it! I told this to my neighbor who likes mustard sauces & has been known to frequent Maurice's establishments when I gave him a sample made according to Mike's recipe. Later on he informed me that Mike could be right... he liked Mike's Sauce better than Maurice's. Moreover, he wanted the recipe! I have tweeked the recipe a bit and love this sauce better than all other mustard-based sauces I have tried. It is also delicious on HAM sandwiches & sausage biscuits!

Categories     Sauces

Time 20m

Yield 2 cups, approximately

Number Of Ingredients 8

1 1/2 cups prepared yellow mustard (French's)
1/2 cup light brown sugar, packed
1/2 cup tomato paste
5 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon cayenne pepper (can adjust to desired heat level)
1/2 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder

Steps:

  • Combine all ingredients in a saucepan & whisk over medium heat.
  • Once the sauce is simmering, whisk until the sugar dissolves completely. This should take 5 minutes or less.
  • Do not overcook (sauce requires less time simmering if sugar substitue is used).
  • Remove from heat and cool before using.
  • Store sauce in a sterilized GLASS jar in the refrigerator between uses.
  • (I sterilize a suitable empty BBQ sauce bottle by capping with 1/2 cup of cider vinegar inside it, swirling it by shaking several times over a few days, & then draining well when ready to fill with BBQ sauce.).
  • Optional: in place of the light brown sugar, use 1/2 cup of sugar substitute + 1T molasses. The sugar substitute version (which I now keep on hand) is diabetic friendly & easier to adapt to sugar substitute than most tomato based sauces I have attempted to modify & encountered consistency problems.

SLOW-COOKED BRISKET WITH CAROLINA BBQ SAUCE

Slow-Cooked Brisket with Carolina BBQ Sauce image

South Carolina BBQ sauce has a mustard-vinegar base that adds a big zing to my slow-braised brisket.

Provided by Food Network

Categories     main-dish

Time 4h

Yield 4 servings

Number Of Ingredients 22

2 tablespoons olive oil
Miss Brown's House Seasoning, recipe follows
One 2-pound beef brisket, fat cap trimmed, sinew removed
4 medium yellow onions, halved and sliced 1/2 inch thick
2 bay leaves
Kosher salt and freshly ground black pepper
20 ounces pale ale
Sliced white bread, for serving
2 cups apple cider vinegar
1/2 cup packed light brown sugar
1/2 cup spicy brown mustard
1/2 cup whole-grain mustard
1/2 cup yellow mustard
1 red onion, roughly chopped
1 garlic clove, peeled and smashed
3 tablespoons bourbon
1/2 teaspoon cayenne
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F.
  • For the brisket: Add the olive oil to a large Dutch oven over medium-high heat. Sprinkle the brisket with Miss Brown's House Seasoning. Sear the brisket fat-side down until a deep golden crust forms, 5 to 7 minutes. Flip and sear other side until deep golden brown, another 5 minutes. Remove to a sheet tray.
  • Add the onions and bay leaves and season with salt and pepper. Stir until coated in fat. Add the beer and bring to a boil. Put the brisket on top of the onions, cover and place in the oven for 3 hours.
  • For the BBQ sauce: While the brisket cooks, add the vinegar, brown sugar, brown mustard, whole-grain mustard, yellow mustard, onion, garlic, bourbon and cayenne to a medium saucepan over medium-high heat. Bring to a boil and cook until the onion becomes slightly translucent, about 5 minutes. Remove from the heat, add to a blender (or use an immersion blender) and puree until smooth, being careful of hot steam. Pour back into the pan and simmer over medium-low until slightly thickened and reduced by 1/4, about 30 minutes.
  • At the 3-hour mark, pour 1 cup of the BBQ sauce over the brisket, return to the oven and cook until the sauce has melted into the brisket, 30 minutes more. Use a knife to test the tenderness of the brisket. It should pierce the brisket very smoothly, with no pushback.
  • Remove the brisket from the pot and slice against the grain. Discard the bay leaves. Serve with sliced white bread and all those slow-braised beer onions. Don't forget about the extra BBQ sauce for dipping. Store any extra sauce in an airtight container in the refrigerator for up to 2 weeks.
  • Stir together the onion powder, paprika, garlic powder, salt and pepper in a medium bowl. Keep in an airtight container. Makes 5 teaspoons.

Although far from fool-proof, I used the following scheme:
First, a few disclaimers. Categorizing BBQ sauces is a tough job.
Except for the distinction between Eastern Carolina vinegar sauces,
the distinctions are not always clear cut. I've done a classification
based on 1) the comments of the original source and 2) simple induction
by looking at the characteristics of sauces from different localities,
3 ) articles on regional variation in BBQ.
1 ) North Carolina Eastern: vinegar base, no tomato
2 ) North Carolina Piedmont: vinegar base, with small amounts of tomato
3 ) North Carolina Western: strong tomato with some vinegar
4 ) South Carolina: mustard base, usually with some tomato
5 ) Charlotte: thin tomato
Next, I have not included attributions, since I don't remember where
most of the sauces came from. I assumed that this file would be strictly
for personal use.
In addition, the recipes are rather telegraphic. To save
space, I included minimal cooking instructions and often abbreviate
ingredient names (tom for tomato, pepper always refers to black pepper,
etc.)
Lastly, any additions would be appreciated.

CAROLINA PORK TENDERLOIN WITH PEACH BBQ SAUCE AND SWEET POTATO HASH BROWNS

Carolina Pork Tenderloin with Peach BBQ Sauce and Sweet Potato Hash Browns image

Provided by Food Network

Categories     main-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 21

Nonstick cooking spray
1 tablespoon hickory barbecue seasoning blend
2 pounds pork tenderloin, cleaned
2 cups prepared virgin Bloody Mary mix
1 1/2 cups peach nectar
1 teaspoon Worcestershire sauce
1/4 cup apple cider vinegar
3 tablespoons brown sugar
1 teaspoon granulated garlic
2 teaspoons hot sauce
Freshly cracked black pepper
2 1/2 cups chopped frozen peaches
3 tablespoons vegetable oil
2 tablespoons butter
4 cups sweet potatoes, peeled and shredded
1 to 2 cups bagged frozen onions and red bell pepper mixture, chopped
1/4 cup chopped fresh celery leaves
2 teaspoons kosher salt
Freshly ground black pepper
2 fresh peaches, sliced
2 tablespoons chopped parsley leaves

Steps:

  • Preheat oven to 375 degrees F. Spray a large ovenproof skillet with nonstick cooking spray. Sprinkle the barbecue seasoning blend over the pork tenderloin. Quickly sear the meat on all sides over medium heat.
  • Meanwhile, while meat is searing, start the hash browns by adding the vegetable oil and butter to another large skillet. Add the shredded sweet potatoes, onion and bell pepper blend, and celery leaves in a single layer. Cook over medium heat for 3 to 4 minutes without stirring. Stir in the salt and pepper, to taste, and continue to cook until potatoes are tender, about 10 to 12 minutes.
  • Once the tenderloin has been seared, remove to a platter and to the same skillet whisk in the Bloody Mary mix, peach nectar, Worcestershire sauce, apple cider vinegar, brown sugar, garlic, hot sauce, cracked black pepper, and chopped peaches; simmer over medium heat for 8 to 10 minutes. Remove sauce from heat, place the seared pork in skillet and spoon sauce over top. Place the skillet in oven and cook until pork reaches an internal temperature of 155 degrees F on an instant-read thermometer. Remove meat from oven and allow to sit for a few minutes before slicing. To plate, arrange sweet potato hash browns and the sliced pork on individual dishes and top with some of the sauce. Garnish with fresh peach slices and a sprinkling of parsley.

PALEO CAROLINA GOLD BBQ SAUCE RECIPE - (4.4/5)

PALEO CAROLINA GOLD BBQ SAUCE Recipe - (4.4/5) image

Provided by ROBandSEAN

Number Of Ingredients 8

4 strips of nitrite free bacon, diced (preferably humanely raised and sugar free if you can find it)
1/2 a red onion, diced
2 - 9 oz. containers of Annie's Organic Yellow Mustard, or approximately 2 cups of another organic, sugar free, gluten free YELLOW mustard (it must be YELLOW! Not DIJON or BROWN or any other mustard. IT. MUST. BE. YELLOW)
3/4 cup of good honey (preferably raw and local)
1 tablespoon of granulated garlic
1 Tablespoon of paparika
3/4 cup of Apple Cider Vinegar
Salt and Pepper to taste

Steps:

  • Sauté the diced onions and bacon in a heavy bottom pot for 15 minutes until the bacon is cooked and the onions are nice and soft. I used a Le Creuset for easy cleanup. Add the rest of the ingredients and simmer for 10 minutes until all the flavors have married. Store in glass mason jars, and serve on just about anything. Yup, it's delicious. I highly recommend you make some as soon as possible. Can it be made without bacon? Sure, but why would you? It might be good, but not nearly as good as the bacon version. Also, here is a little tip: it can be difficult to get all the mustard out of the plastic containers, so pour some of the apple cider vinegar into the mostly-emptied mustard bottles, reseal them, and shake them up. The vinegar is going to go in the sauce anyway, and this way you get all of the mustard. Waste not, want not! I hope you enjoy this recipe as much as we do!

Time 35m

Yield 32 serving(s)

Number Of Ingredients 10

1 cup cider vinegar
1 cup ketchup
1/3 cup spicy brown mustard
1/2 cup packed brown sugar
1/2 cup onion, chopped
2 tablespoons butter
1/4 teaspoon chili powder
1 dash Worcestershire sauce
1 pinch cayenne pepper
to taste salt and pepper

Steps:

  • sautee onions in butter until tender, about 5 minutes.
  • Add spices and stir.
  • Add all other ingredients.
  • Bring to a soft boil, then turn down heat and simmer for 20 minutes.
  • Serve warm or cool.

Tips:

  • Choose the right vinegar. Apple cider vinegar is the most common type of vinegar used in Carolina BBQ sauce, but you can also use white vinegar, red wine vinegar, or even champagne vinegar. Each type of vinegar will give the sauce a slightly different flavor.
  • Use a variety of spices. The most common spices used in Carolina BBQ sauce are black pepper, red pepper flakes, paprika, garlic powder, and onion powder. However, you can also add other spices, such as cumin, chili powder, or oregano, to taste.
  • Simmer the sauce for at least 30 minutes. This will allow the flavors to meld and develop. You can simmer the sauce for longer if you want a thicker sauce.
  • Taste the sauce and adjust the seasonings as needed. You may want to add more vinegar, sugar, or spices to taste.
  • Let the sauce cool before using. This will allow the flavors to continue to develop.

Conclusion:

Carolina BBQ sauce is a delicious and versatile condiment that can be used on a variety of dishes. It is easy to make at home with a few simple ingredients. With a little experimentation, you can create your own unique Carolina BBQ sauce that is perfect for your taste.
