1 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 eggs, beaten
½ cup vegetable oil
½ cup milk
2 cups shredded carrots
1 (3.5 ounce) package flaked coconut
½ cup maraschino cherries, chopped
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

2 eggs
1 cup sugar
2/3 cup oil
1 1/2 cups flour
3/4 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups finely grated carrots
1/2 cup chopped walnuts
3/4 cup raisins

Steps:

  • Beat eggs.
  • Add sugar and oil and beat thoroughly.
  • Combine dry ingredients and add to egg mixture; beat well.

1 teaspoon baking powder
