Carrot and Coriander Soup II image

I learned to make this soup after living in the United Kingdom for 10 years. This soup is incredibly simple to make with just a few ingredients. Coriander is the British word for cilantro, which gives this soup a smooth flavor.

Time 55m

Yield 4

Number Of Ingredients 10

½ medium butternut squash
2 tablespoons olive oil
1 onion, diced
1 pound carrots - peeled and diced
3 cloves garlic, crushed or to taste
1 (2 inch) piece fresh ginger, peeled and thinly sliced
4 cups water
salt and pepper to taste
1 pinch ground cinnamon
¼ cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Scoop seeds out of the butternut squash half, and place cut side down onto a greased baking sheet. Bake for 30 to 40 minutes, or until softened. Allow to cool, then scoop the squash flesh out of the skin using a large spoon and set aside. Discard skin.
  • Heat olive oil in a large saucepan or soup pot over medium heat. Add chopped onion and garlic, and cook, stirring until onion is translucent. Pour in the water, and add squash, carrots and ginger. Bring to a boil, and cook for at least 20 minutes, or until carrots and ginger are tender.
  • Puree the mixture in the blender, or using an immersion blender. Add boiling water if necessary to thin, but bear in mind this is meant to be a thick creamy soup. Return soup to the pan, and heat through. Season with salt, pepper and cinnamon.
  • Ladle into serving bowls, and pour a thin swirl of cream over the top as a garnish if desired.

CARROT GINGER SOUP

Carrot Ginger Soup image

This delicious soup came from a course called "Seasonal Cooking", presented by Christopher Green at L'Academie de Cuisine in Bethesda, Maryland.

Provided by Cucina Casalingo

Categories     < 60 Mins

Time 40m

Yield 4 serving(s)

Number Of Ingredients 10

2 lbs carrots, roughly chopped
4 cups chicken stock
2 inches piece ginger (to taste)
1 medium onion, chopped
2 -3 garlic cloves, roughly chopped
1 tablespoon coriander seed
1 teaspoon champagne vinegar or 1 teaspoon white wine vinegar
salt and pepper (add early, brings out the flavor)
1 tablespoon peanut oil
1 -2 ounce heavy whipping cream (half-and-half or milk)

Steps:

  • Toast the coriander in a small pan over medium-high heat until fragrant. Cool and grind in a mortar and pestle or spice grinder.
  • In a heavy-bottomed pot, add the oil and onion, ground coriander, salt and pepper. Sweat 2-3 minutes, and then add ginger and garlic. Sweat 1-2 minutes. Do not let brown.
  • Add carrots and chicken stock to cover carrots.
  • Bring to a boil, reduce to a simmer and cook until carrots are very tender (like baby food) and will mash easily with a spoon. Add vinegar.
  • Carefully puree soup in a blender and return to pot. If soup is too thich, thin with chiccken stock or water. Adjust seasoning.
  • Strain through a fine mesh strainer. Hold until ready to serve.
  • To serve, add cream and bring to a boil. Serve immediately.

Tips:

  • Use fresh ingredients: Fresh carrots, coriander, and ginger will give your soup the best flavor. If you can't find fresh coriander, you can use dried coriander, but it will have a less intense flavor.
  • Don't overcook the vegetables: The vegetables should be tender but still have a slight crunch. Overcooking them will make them mushy.
  • Use a good quality vegetable broth: A good quality vegetable broth will add depth and flavor to your soup. If you don't have vegetable broth, you can use water, but your soup will have a less intense flavor.
  • Season to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of yogurt for extra flavor.
  • Serve hot: Carrot coriander ginger soup is best served hot. You can garnish it with fresh coriander leaves or a sprinkle of chili flakes.

Conclusion:

Carrot coriander ginger soup is a delicious and healthy soup that is perfect for a light lunch or dinner. It is also a great way to use up leftover carrots, coriander, and ginger. This soup is sure to please everyone at your table.
