1 head cauliflower
1 tablespoon olive oil, or more as needed
4 medium (blank)s carrots, diced
4 stalks celery, diced
1 small yellow onion, diced
2 cloves garlic, finely diced
4 cups chicken broth
¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt, or to taste
1 pinch ground black pepper to taste
3 cups milk, at room temperature
12 ounces freshly shredded sharp Cheddar cheese, or more to taste

Steps:

  • Place cauliflower into the bowl of a food processor and blend until finely chopped.
  • Heat oil in a large saucepan over medium-high heat until shimmering. Add carrots, celery, and onion. Cook for 2 to 3 minutes. Add garlic and continue to cook for 5 to 6 minutes. Pour in broth and cauliflower; increase heat to high. Bring to a boil; reduce heat to a simmer and cook until vegetables are tender, 15 to 20 minutes.

1 head cauliflower (cut up)
4 medium sized potatoes
1 leek, chopped
1 onion, chopped
4 garlic cloves, crushed
1 tablespoon thyme
1 tablespoon basil
3 bay leaves
5 1/2 cups vegetable stock (or chicken stock)
2 cups of grated cheddar cheese
1 cup cream
oil
butter
baguette, slices
gruyere cheese

Steps:

  • In a large pot add oil and butter and melt.
  • Saute onion, leek, garlic, thyme and basil until softened.
  • Add potato and cauliflower and toss through.
  • Add vegetable stock and bay leaves and cook for around 40 minutes.
  • Remove bay leaves.
  • Blend half the soup in a blender or with a hand held blitzer.
  • Mash with a potato masher the other half of the soup.
  • Add the blended half of the soup back with the mashed soup.
  • Return to heat and add the cheese. Stir till dissolved (this wont take long so dont leave it too long).
  • Add the cream and stir through.
  • To top with toast:.
  • Slice a baguette into thin slices.
  • Cover the slices with slices of gruyere cheese (if you dont have gruyere, then use cheddar or whatever cheese suits you).
  • Bake the slices in the oven for about 5 minutes at 180 until the cheese has melted.
  • If the slices are too big for the soup, quarter them or half them.
  • Serve on top of the soup.

2 carrots
2 sticks celery
2 medium onions
2 garlic cloves
800 g cauliflower
2 tablespoons olive oil
200 g cheddar cheese
2 vegetable bouillon cubes (or chicken)
sea salt
black pepper, freshly ground
1 teaspoon English mustard
nutmeg (optional)
1 7/8 liters water, boiling

Steps:

  • Peel and roughly chop the carrots.
  • Slice the celery.
  • Peel and roughly chop the onions.
  • Peel and slice the garlic.
  • Cut the cauliflower into 1.5cm slices.
  • Put a large pan on medium heat and add 2tb olive oil.
  • Add all your chopped and sliced ingredients and mix together with a wooden spoon.
  • Cook for around 10 minutes with the lid askew, until the carrots have softened but are still holding their shape, and the onion is lightly golden.
  • Grate the cheddar into a bowl and put to one side for later.
  • Put the stock cubes into a jug or pan and pour in 1.8 litres of boiling water from the kettle.
  • Stir until the stock cubes are dissolved, then add the vegetables.
  • Give the soup a good stir and bring to the boil.
  • Reduce the heat and simmer for 10 minutes with the lid on.
  • Remove the pan from the heat.
  • Season with salt and pepper and add the cheese and mustard.
  • Using a hand blender or liquidizer, pulse the soup until silky smooth.
  • Divide between your serving bowls and grate over some nutmeg, if you like.
  • If you want to dress it up a bit, top it with some lightly fried crispy bacon.

1 celery rib, chopped
1 carrot, peeled and chopped
2 garlic cloves, minced
4 cups chicken broth (or vegetable broth)
1/2 cup dry white wine
1 head cauliflower, broken into small flowerets
1/2-1 teaspoon curry powder
1/4 teaspoon white pepper
1/2 teaspoon white sugar
salt, as needed, to taste
1 cup light cream
1 cup shredded cheddar cheese

Steps:

  • In a large soup pot over medium heat, melt butter; add onion, celery, carrot and garlic. Sautee 5-7 minutes or until softened (do not let garlic burn).

1/2 cup chopped onion

This is a chunked full vegetable soup with lots of vitamins. Made for my special kids who had usually never tasted a fresh vegetable before. There are no onions, garlic or peppers in any of the soups.

1 large head cauliflower, cut in flowerettes, then cut vertically, thin slices
10 stalks celery, thinly sliced with leaves
6 large carrots, grated
2 quarts water
1/2 cup margarine
1 teaspoon salt or 1 teaspoon salt substitute
1 (12 ounce) can evaporated milk
2 cups milk
2 cups frozen peas (optional)
2 cups cheddar cheese

Steps:

  • In large stockpot add carrots, celery and cauliflower to 2 quarts water. Add margarine, salt.
  • Cook 20 to 25 minutes on low heat, covered.
  • Take off heat, add evaporated milk, two cups of milk and optional frozen peas.
  • Put back on burner and heat on low and stir until warm and hot to serve. Do not boil.
  • Ladle in serving bowls, pass the cheese if they want a soup topper. Serve with triscuits or a whole wheat cracker. This is a very rich soup. If you want to add more water, feel free.

1 head broccoli
1 -2 cup old cheddar cheese, shredded
1 medium potato, shredded
1 carrot, peeled shredded
1 shredded medium onion
1/2 cup celery, diced
1 -2 teaspoon Worcestershire sauce
1 teaspoon dill weed
1 teaspoon garlic
1 tablespoon mustard
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Pre cook medium head of cauliflower and medium bunch of broccoli (Cook in cold water to boiling point. Turn down to simmer and cook for 10 minutes. Chop into bite-size pieces).
  • Prepare a white sauce made from milk and flour in large pot (can use low fat milk).
  • Stir in cheese and spices.
  • Add vegetables and stir.
  • Simmer until vegetables are tender.

1 large head cauliflower, cut into florets and divided
1 ½ cups chopped onion
⅔ cup peeled and diced russet potato
1 carrot, peeled and chopped
3 cloves garlic
1 ½ teaspoons salt
4 cups water
2 cups shredded sharp Cheddar cheese
¾ cup milk
1 tablespoon minced fresh dill
freshly ground black pepper to taste
1 teaspoon cumin seeds

Steps:

  • Measure 2 cups cauliflower florets into a bowl and set aside.
  • Mix remaining cauliflower florets, onion, potato, carrot, garlic, and salt together in a Dutch oven or stockpot. Pour water over cauliflower mixture; bring to a boil, reduce heat to medium-low, and cook at a simmer until all vegetables are tender, 30 to 40 minutes.

  • Heat a small skillet over medium-high heat. Toast cumin seeds in hot skillet until lightly toasted and fragrant, 1 to 2 minutes; stir into the soup.
