8 strips bacon
1 stalk celery, finely chopped
2 tablespoons minced fresh garlic
5 cups finely chopped cauliflower
2 tablespoons water
1 teaspoon onion powder
2 cups milk
2 cups chicken broth, divided
3 dashes hot sauce, or to taste
2 tablespoons flour
2 cups shredded sharp Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Cook bacon in a large skillet and over medium heat, turning occasionally, until crispy, 10 to 12 minutes. Transfer to a paper towel-lined plate with a slotted spoon, leaving bacon grease in the skillet. Crumble bacon when cool to the touch.
  • Add celery and garlic to the skillet and cook in the bacon grease until celery is tender, 3 to 4 minutes. Add cauliflower, water, and onion powder; cover skillet to steam cauliflower. Cook, stirring every so often, until cauliflower is tender, about 5 minutes.
  • Add milk, 1 3/4 cups chicken broth, and hot sauce. Bring to a boil.
  • Meanwhile, whisk flour into the remaining chicken broth in a small bowl and drizzle into the boiling chowder. Add Cheddar cheese and 1/2 of the crumbled bacon. Stir until smooth and cheese has melted.
  • Season with salt, pepper, and hot sauce. Ladle into bowls and top with remaining bacon.

I came up with this recipe myself when I had a ham hock and wanted to make something other than the usual split pea soup. The resulting chowder was satisfying and good-tasting. Mashed potatoes help give it a rich, creamy texture.

1 meaty ham bone
2 quarts water
1 large onion, chopped
1 medium green pepper, chopped
1/2 cup butter
3/4 cup all-purpose flour
1-1/2 teaspoons salt

4 cups milk
4 cups cauliflowerets, cooked and drained
2 cups mashed potatoes (prepared with milk and butter)
Minced fresh parsley, optional

Steps:

  • In a soup kettle, simmer ham bone in water for 1-1/2 hours. Remove ham bone; set cooking liquid aside. When cool enough to handle, remove meat from bone; discard bone. Return ham to cooking liquid; set aside. , In a saucepan, saute onion and green pepper in butter until tender. Stir in flour, salt and pepper until blended. Gradually add milk. 2 stalks celery, chopped
1 small onion, chopped
28 ounces vegetable broth
1 ½ cups water
1 head cauliflower, finely chopped
1 large potato, peeled and chopped
1 (16 ounce) jar roasted red peppers, drained and chopped
1 cup evaporated milk

Steps:

  • Melt margarine over medium heat in a Dutch oven. Add celery and onion and cook, stirring occasionally, for 5 minutes.
  • Pour vegetable broth and water into the Dutch oven and bring to a boil. Add cauliflower and potato; return to a boil. Reduce heat to low and let simmer until potato is tender, about 20 minutes.

1 large cauliflower
1 cup onion, diced
1 cup celery, diced
6 medium fresh mushrooms, chopped

2 cups chicken broth or 2 cups chicken stock
2 -3 cups cooked ham, cubed
3 tablespoons potato flakes

Steps:

  • Steam trimmed whole head of cauliflower with stalk down for about 6 minutes.
  • Remove and cool to handle.
  • Break off florets and finely dice stalk.
  • In cast iron skillet, sauté onion and celery in butter or oil over Medium-High heat until softened.

1 celery rib (chopped)
2 large potatoes (or 3-4 medium potatoes, diced)
1 1/2 cups cauliflower (broken into bite sized flourets)
2 cups frozen corn
1/4 cup grated carrot
1/2 garlic clove (more or less to taste)
4 tablespoons butter (or margarine)
2 tablespoons cornstarch
1/2 cup chicken stock
1/2 cup milk
1 teaspoon salt

  • CHOWDER:.
  • Begin by frying bacon and set aside for use as topping.
  • Use some of the bacon grease (enough to coat bottom of pan) to fry onion on medium heat until soft. 5-10 minutes depending how thick or finely you have chopped them.
  • Toss in the diced potatoes and half of the chicken stock (1/4 cup), cover pot with lid and cook until soft. Approximately 15 minutes, but could be more or less depending on diced size.
  • Reduce the heat to medium-low.
  • Mash some of the potatoes with a fork (I usually mash about half of them).
  • Push the mashed and the whole potatoes to one side of the pan and drop in the butter to melt. Using your fork, blend in the corn starch while slowing adding the remaining chicken stock to make a gravy -- keep stirring until thickened.
  • Raise heat to medium high. Slowly add the milk while stirring contents. Add salt, pepper and hot sauce. Continue gently stirring contents to prevent scorching.
  • Once the liquid begins to simmer, add corn, cauliflower, celery and carrot to pot and reduce the heat to low and cover.
  • Allow to simmer, for about 1 hour or until cauliflower is soft. Do stir contents about every 15 to 20 minutes to prevent sticking and/or scorching.
  • OPTIONAL:.
  • Serve topped with cheddar cheese, green onion and bacon crumbles. If you enjoy some heat (spiciness), try using Monterrey Jack cheese.

1 head cauliflower/ 2 cups of sliced
1 can(s) 13-3/4 oz chicken broth
1 c light cream or 1/2 and 1/2
1 can(s) condensed cream of potato soup
1/4 can(s) water
2 Tbsp corn starch
2 c cooked/diced ham
1/8 tsp pepper

Steps:

  • 1. Boil cauliflower in chicken broth until tender, do not drain.
  • 2. Mix together light cream (or 1/2 and 1/2) with condensed potato soup. Add to the cauliflower mixture. Mix water & corn starch together with a whisk; add to the cauliflower mixture.
  • 3. Once all combined add in the diced ham and salt & pepper to taste. Cook on low-med for 30 minutes; careful not to scorch.

2 cups chicken broth, divided
8 slices bacon, roughly chopped, divided
1 small onion, minced
1 celery stalk, minced
3 garlic cloves, minced
Salt & pepper
4 cups shredded cauliflower (1/2 large head)
2 tbsp water
2 cups 2% milk
Hot sauce, to taste
2-1/2 cups shredded sharp cheddar cheese, divided
2 green onions, chopped

Steps:

  • Whisk together flour and 1/4 cup chicken broth in a small bowl then set aside. Cook bacon in a dutch oven or large soup pot over medium heat until crisp. Transfer bacon to a paper towel lined dish and remove all but 1 tbsp of grease from the pot. Add minced onion, celery and garlic to the pot then season with salt and pepper and saute until vegetables are tender, about 4-5 minutes. Note: Since I was using a food processor to shred the cauliflower (you can also use a box grated), I used it to mince the other veggies simply by dropping them in and letting it spin. But mincing and grating by hand totally work, too. Add cauliflower to the pot and stir to combine. Add water, cover, and steam cauliflower until tender, stirring a couple times, about 5-7 minutes. Add remaining chicken broth and milk, turn up heat and bring to a boil. Slowly whisk in flour/chicken broth mixture while stirring, then reduce heat and simmer for 3-4 minutes, until chowder has thickened. Remove from heat and stir in 2 cups of the cheddar cheese until smooth, then stir in half the cooked bacon. Taste and adjust salt, pepper, and/or hot sauce. Serve topped with remaining cheese, bacon, and green onions.

Vegan Buffalo Cauliflower Chowder with Herbed Crostini image

2 tablespoons olive oil
1 medium yellow onion (diced (about 2 cups))
2 medium carrots (diced)
2 medium stalks celery (diced)
2 medium cloves garlic (minced)
1/2 teaspoon smoked paprika
1 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
4 cups low-sodium vegetable broth
4 cups cauliflower florets (cut into 1/2-inch pieces)
3 medium Yukon Gold potatoes (about 1 pound, cut into 1/2 inch cubes)
3 tablespoons red hot sauce (more or less, to taste)
1 cup Silk unsweetened almondmilk
1/4 cup chopped Italian parsley
Optional toppings such as sliced scallions
1/2 baguette (sliced thin (about 1/4-inch))
1/4 cup extra-virgin olive oil
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh dill
1/8 teaspoon kosher salt

Steps:

  • Set a large soup pot over medium heat. When hot, add the olive oil. Add the onions, carrots, and celery. Saute, stirring occasionally, until tender, 6-7 minutes. Add garlic, smoked paprika, 1 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Cook for another minute, stirring frequently.
  • Add the vegetable broth, cauliflower, and potatoes. Increase heat to medium high to bring to a boil. Once the mixture is boiling, reduce heat to medium low. Simmer, covered, until the potatoes and cauliflower are tender, 15-20 minutes.
  • While the soup simmers, make the crostini. Set the slices of baguette on a baking sheet. In a small bowl, stir together the olive oil, herbs, and salt. Using a pastry brush, generously brush the tops of each slice of bread with the olive oil herb mixture. Broil on high until toasted and golden brown, 2-5 minutes (the time really depends on your broiler. Watch carefully - they can burn fast!)
  • Back to the soup! Remove the soup from the heat and let cool just until safe to handle. Transfer 1/2 of the soup, about 4 cups, to a bowl and, using an immersion blender, puree the remaining soup. If you don't have an immersion blender, you can puree 1/2 of the soup in a blender or food processor. Return all of the soup to the pot, mixing the pureed soup and the chunky soup back together.
  • Place the soup back on the burner (medium-low heat). Stir in the red hot sauce and the almond milk. If you're sensitive to heat/spiciness, you may want to start with 1-2 tablespoons of hot sauce, then add more to taste. Return to a simmer and stir in the parsley. Taste and add additional salt and pepper if desired.
  • Ladle into bowls, serve with assorted toppings, and float a crostini on top of each bowl (or serve alongside).
