POTATO, PEA, AND EGG SALAD WITH SOME SNEAKY CAULIFLOWER

Potato, Pea, and Egg Salad with Some Sneaky Cauliflower image

Potatoes, peas, and eggs in a classic salad dressing. Sneaking in a little cauliflower improves the nutrition without changing the taste. The firm potatoes camouflage the cauliflower from those who would balk at eating vegetables! Blanching the cauliflower and peas also helps preserve their nutrients.

BROCCOLI ~ CAULIFLOWER ~ PEA SALAD

Broccoli ~ Cauliflower ~ Pea Salad image

A salad similar to this was served at my niece's bridal shower. Everyone was raving! We were all trying to figure out the dressing. So this is what I came up with, and it's a real keeper! When I made this for Hubby, he couldn't get enough! I hope you like this as much as we do!

Number Of Ingredients 7

2 c frozen broccoli and cauliflower medley, thawed
1/2 c frozen peas, thawed
1 bunch green onions, cut small, up into the green part
THE DRESSING
1/4 c mayonnaise
1/4 c sour cream
1/8 tsp garlic powder

Steps:

  • 1. In a bowl mix the green onions into the broccoli, cauliflower, and peas. In a separate bowl mix the mayonnaise, sour cream and the garlic powder together.
  • 2. Pour the dressing over the vegetables. Mix well. Chill, serve, and enjoy!
  • 3. ** If you prefer, you can use fresh broccoli and cauliflower. Just blanch first. This process will keep the broccoli and cauliflower still crisp, just slightly tender.

Tips:

  • For the best flavor, use fresh cauliflower and peas. If using frozen peas, thaw them completely before adding them to the salad.
  • To make the salad ahead of time, cook the cauliflower and peas and let them cool completely. Then, store the salad in an airtight container in the refrigerator for up to 3 days.
  • This salad is a great way to use up leftover cooked chicken or tofu. Simply add it to the salad along with the cauliflower and peas.
  • For a vegan version of the salad, omit the chicken and use a vegan mayonnaise or dressing.
  • To add a bit of spice to the salad, add a pinch of cayenne pepper or red pepper flakes.

Conclusion:

Cauliflower pea salad is a healthy and delicious side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and refreshing salad, give cauliflower pea salad a try. You won't be disappointed!
