SALAD WITH APPLE, CELERY, HAZELNUTS AND ROQUEFORT CHEESE

Salad With Apple, Celery, Hazelnuts and Roquefort Cheese image

From the December 2004 issue of Cook's Illustrated Magazine. A salad for bleu cheese lovers. Makes a great company salad for special occasions. For the olive oil I substituted 2 tablespoons of hazelnut oil plus 1 tablespoon of bland oil. A mouthwatering taste of tangy, sweet and tart. Try different types of bleu cheese for variety and personal preference.

Tips:

  • Choose the right celery root. Look for one that is firm and heavy for its size, with no blemishes or bruises.
  • Peel the celery root carefully. Use a sharp knife to remove the outer layer of skin, being careful not to cut into the flesh.
  • Slice the celery root thinly. This will help it cook evenly and absorb the flavors of the dressing.
  • Don't overcook the celery root. It should be tender but still have a slight crunch.
  • Use a flavorful dressing. The dressing is what will really make this salad shine. Be sure to use a dressing that you love, and that complements the flavors of the celery root and apples.
  • Add some crunch. The hazelnuts in this recipe add a nice crunch to the salad. You could also add other crunchy ingredients, such as chopped walnuts, pecans, or croutons.
  • Serve the salad immediately. This salad is best enjoyed fresh. If you need to make it ahead of time, store the dressing and salad separately and assemble just before serving.

Conclusion:

This celery root and apple salad with hazelnut vinaigrette is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a new salad recipe, give this one a try. You won't be disappointed!
