Steps:
- Combine water and sugar in a small bowl. Sprinkle the yeast over the top. Set aside until foamy, about 8 minutes.
- Put 1 cup of the flour in a large bowl and make a well in the center. Whisk honey with 1 of the whole eggs, the yolks, olive oil, and salt in a small bowl and pour into the well. Stir to combine. Add yeast mixture, remaining 3 cups flour, and currants and stir to make a soft, shaggy dough. Knead dough on a lightly floured surface until soft and supple, about 10 minutes.
- Shape dough into a ball and place in lightly oiled large bowl. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour. Turn dough onto a lightly floured surface; knead for just a minute, shape into a ball and return to bowl. Cover and let rise again until doubled in size, about 1 hour.
- Line a baking sheet with parchment paper. Form loaf according to the following instructions: Turn dough onto a clean work surface and divide into 3 equal pieces. Roll and stretch each piece into a rope 12 to 15 inches long. Arrange ropes side by side on the work surface. Starting at the far end, braid the ropes. When the braid is finished, tuck both ends under and pinch to seal. Place loaf on prepared baking sheet.
- Cover with a clean, dry kitchen towel and set aside to rise until doubled, about 1 hour.
- Place a rack in the center of the oven and preheat to 375 degrees F. Beat remaining egg. Brush loaf with egg and sprinkle with poppy seeds. Bake until golden brown, about 35 minutes.

Steps:
- In a large bowl, sprinkle yeast over barely warm water. Beat in honey, oil, 2 eggs, and salt. Add the flour one cup at a time, beating after each addition, graduating to kneading with hands as dough thickens. Knead until smooth and elastic and no longer sticky, adding flour as needed. Cover with a damp clean cloth and let rise for 1 1/2 hours or until dough has doubled in bulk.
- Punch down the risen dough and turn out onto floured board. Divide in half and knead each half for five minutes or so, adding flour as needed to keep from getting sticky. Divide each half into thirds and roll into long snake about 1 1/2 inches in diameter. Pinch the ends of the three snakes together firmly and braid from middle. Either leave as braid or form into a round braided loaf by bringing ends together, curving braid into a circle, pinch ends together. Grease two baking trays and place finished braid or round on each. Cover with towel and let rise about one hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Beat the remaining egg and brush a generous amount over each braid. Sprinkle with poppy seeds if desired.
- Bake at 375 degrees F (190 degrees C) for about 40 minutes. Bread should have a nice hollow sound when thumped on the bottom. Cool on a rack for at least one hour before slicing.

Steps:
- Heat oven to 350°F with rack in middle. Generously butter baking dish.
- Roast pecans in a pie or cake pan until fragrant and insides are pale golden, 8 to 10 minutes. Let cool, then coarsely chop.
- Divide bread between 2 large baking sheets and bake, switching position of sheets halfway through baking, until golden, 15 to 25 minutes.
- Meanwhile, heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then cook sausage, stirring and breaking up lumps, until browned, about 5 minutes. Transfer sausage to a very large bowl.
- Add butter to skillet and heat over medium heat until foam subsides. Add onions, celery, garlic, allspice, and 1/2 teaspoon each of salt and pepper, and cook, stirring occasionally, until beginning to brown lightly, 12 to 15 minutes. Add vegetables to sausage with bread, cherries, and pecans, and toss to mix well.
- In a medium bowl, whisk eggs, then whisk in stock, cream, and parsley, and pour over stuffing. Stir stuffing well, then spread it out in baking dish. Chill if turkey is more than 1 hour from being done.
- When turkey is done, increase oven temperature to 425°F. Cover stuffing tightly with foil and bake until hot throughout, 20 to 25 minutes. Remove foil and bake until top is golden brown and crisp, about 10 minutes more.

Steps:
- Butter a large bowl; set aside. Stir all remaining ingredients, except the egg for egg wash and the butter for brushing, in a large bowl until well combined. Turn out dough onto a lightly floured work surface; knead dough, adding flour if needed, until smooth and pliable, about 15 minutes.
- Transfer dough to buttered bowl; brush top with 1 tablespoon melted butter. Loosely cover with plastic wrap. Let dough rise in a warm place until almost doubled in bulk, about 1 1/2 hours.
- Turn out dough onto a lightly floured work surface; knead 5 minutes, then return to bowl. Brush top with remaining tablespoon melted butter, and loosely cover with plastic wrap. Let dough rise again until doubled in bulk, about 1 hour more.
- Preheat oven to 375 degrees. Divide dough into three equal pieces. Roll each piece into a ball, and loosely cover each ball with buttered plastic wrap. Let rest 20 minutes.
- Roll each ball into a 12-inch-long log, leaving the middle a little thicker than the ends. Lay logs side by side lengthwise; pinch together ends farthest from you, then tightly braid strands, pulling them as you go. Tuck ends of braid underneath. Transfer to a buttered baking sheet, and loosely cover with buttered plastic wrap. Let dough rise until almost doubled in bulk, about 45 minutes.
- Brush dough lightly with egg wash. Bake until golden brown and firm and an instant-read thermometer inserted into bottom registers 180 degrees and comes out clean, 35 to 40 minutes. If challah browns too quickly, loosely tent with foil. Immediately transfer to a wire rack; let cool at least 45 minutes.
CHALLAH IN A HURRY
Made with quick-rise yeast, this is a sweeter, richer challah that lends itself especially well to Rosh Hashanah or other holiday uses. It is quicker and easier than a standard double-rise recipe, so it's great for those afternoons when you're in a challah of a hurry. Challah was meant to be torn and not sliced. B'tayevon!

Tips:
- Use Fresh Ingredients: For the best flavor and texture, use fresh, high-quality ingredients. Fresh cherries, in particular, will give your turnovers the best flavor.
- Chill the Dough: Before rolling and shaping the dough, chill it for at least 30 minutes. This will make it easier to work with and will help prevent the turnovers from becoming too greasy.
- Roll the Dough Thin: The thinner you roll the dough, the flakier your turnovers will be. However, be careful not to roll it too thin, or it will be difficult to work with.
- Use a Sharp Knife: When cutting the dough, use a sharp knife to ensure clean, even cuts. This will help prevent the turnovers from becoming ragged or misshapen.
- Seal the Turnovers Well: To prevent the filling from leaking out, be sure to seal the turnovers well before baking. You can do this by pressing the edges of the dough together with a fork or by using a pastry brush to brush the edges with water before sealing.
- Bake the Turnovers Until Golden Brown: Bake the turnovers until they are golden brown on top. This will ensure that they are cooked through and have a crispy, flaky crust.
Conclusion:
Cherry turnovers are a delicious and versatile treat that can be enjoyed for breakfast, lunch, or dessert. With a flaky crust and a sweet, juicy filling, they are sure to be a hit with everyone who tries them. So next time you are looking for a special treat, give this cherry turnover recipe a try. You won't be disappointed!
