CHAMPINONES AL AJILLO ( GARLIC MUSHROOMS)
This is a classical Spanish tapa served all over Spain. Although my recipe is original, it is authentic as I have constantly revised it duplicating the flavors and consistency I have had in the best tapas bars. This can be made in any oven proof dish, I recommend a "cazuela" (terra cotta dish). Although difficult to find, it can be purchased online through "www.tienda.com".

Steps:
- Warm the oil in a large saute pan over medium heat. Add the garlic and saute about 2 minutes. Do not let it burn.
- Increase the heat to high, and add the mushrooms. Saute until tender for about 5 minutes, stirring occasionally. The time may need to be adjusted according to the type of mushroom used.
- Add the wine (or sherry) and continue to cook until the liquid is absorbed.
- Add the parsley, salt and pepper, and stir to combine.
- Serve while hot.
Tips:
- Choose the right mushrooms. White button mushrooms are the most common type used for champiñones al ajillo, but you can also use cremini or shiitake mushrooms. Just be sure to clean them thoroughly before cooking.
- Use fresh garlic. Garlic is the star of this dish, so make sure you use fresh, minced garlic for the best flavor.
- Don't overcrowd the pan. When cooking the mushrooms, make sure you don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam rather than brown.
- Cook the mushrooms until they are browned. Don't be afraid to cook the mushrooms until they are browned. This will give them a nice, caramelized flavor.
- Add the parsley at the end. Parsley is a classic garnish for champiñones al ajillo. Add it at the end of cooking to brighten up the dish and add a fresh flavor.
Conclusion:
Champiñones al ajillo is a simple but delicious Spanish dish that is perfect for any occasion. It is easy to make and can be served as a tapas dish, a side dish, or even a main course. The combination of garlic, mushrooms, and olive oil is simply irresistible. So next time you're looking for a quick and easy recipe, give champiñones al ajillo a try. You won't be disappointed!
