Time 35m

Yield 4 to 6 minutes

Number Of Ingredients 13

3 tablespoons extra-virgin olive oil
3 cloves garlic, smashed and peeled
2 anchovy fillets
1 teaspoon grated lemon zest (1 lemon)
1 teaspoon grated orange zest (1/2 orange)
1 tablespoon lemon juice (1/2 lemon)
1 tablespoon orange juice (1/2 orange)
1 1/2 teaspoons honey
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
3 large heads Treviso, halved lengthwise
1/2 teaspoon kosher salt
1/2 cup chopped walnuts, toasted

  • For the citrus bagna cauda: Heat the olive oil in a small saute pan over medium heat. Add the garlic and anchovies. Cook, stirring and breaking up the anchovies with a wooden spoon, until the anchovies dissolve and the garlic is fragrant and beginning to brown, about 3 minutes. Set aside to cool to room temperature.
  • Meanwhile, add the lemon zest, orange zest, lemon juice, orange juice, honey, salt and pepper to a small bowl. Once the anchovy-garlic oil has cooled, whisk it into the citrus. Allow to mingle for about 10 minutes before removing the garlic.
  • For the grilled Treviso: Preheat a grill pan over medium-high heat.
  • Grill the Treviso halves until slightly wilted and charred in spots, 3 minutes per side. Remove to a cutting board, cut out the cores and chop the leaves into bite-size pieces. SPRING VEGETABLE BAGNA CAUDA

Spring Vegetable Bagna Cauda image

Provided by Food Network

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 19

2 small heads fennel
6 tiny artichokes
4 small carrots
1 small cauliflower
1 Belgian endive
2 small heads radicchio (or radicchio di Treviso)
8 small asparagus spears
1 bunch baby turnips
1 bunch multicolored radishes
1 bunch spring onions
Handful peeled fava beans
Sea salt
10 to 12 salt-packed anchovies
6 cloves
Salt and pepper
2 cups extra-virgin olive oil
8 tablespoons (1 stick) unsalted butter
A few drops red wine vinegar
Lemon zest, optional

Steps:

  • Wash the vegetables in a large bowl of cold water and blot dry. Trim the fennel of any stringy layers, and slice thinly crosswise. Peel the outer leaves of the artichokes to reveal the pale green hearts, and slice into thin wedges. Peel the carrots and slice lengthwise. Cut the cauliflower into thin slices, or break it up into small florets. Separate the leaves of the Belgian endive and radicchio or Treviso. Snap off and discard the tough bottom ends of the asparagus and slice the spears into quarters lengthwise. Cut the turnips and radishes into quarters, leaving the tops attached, or leave whole if they are small. Clean the spring onions and slice in half lengthwise. Sprinkle everything lightly with sea salt and arrange the vegetables on a platter, tossing them together to create a colorful display. Scatter the fava beans over the top.
  • Rinse and fillet the anchovies. In a mortar, pound the garlic to a paste with a little salt and pepper. Add the anchovies and pound until roughly mashed. Warm the olive oil and butter over medium-low heat. Add half the anchovy mixture, the red wine vinegar, and lemon zest, and gently simmer for 2 minutes. Stir in the remaining anchovy mixture, taste for salt and pepper, and transfer the sauce to a warmed bowl or individual ramekins.

CITRUS-ROASTED ASPARAGUS

Citrus-Roasted Asparagus image

Roasting the asparagus brings out sweetness from the vegetable. Thin or thick spears can be used, although thicker spears provide a "meatier" flavor when roasted. If you're looking for a different way to prepare asparagus, the citrus peel and juices add a delicious touch to roasted asparagus -- a light, bright flavor that perks up the dish.

Categories     Vegetable

Time 35m

Yield 8 serving(s)

Number Of Ingredients 7

2 seedless oranges
2 lemons
5 tablespoons extra virgin olive oil
2 lbs asparagus spears
2 garlic cloves, thinly sliced
1 1/2-2 teaspoons tarragon leaves
sea salt & freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. From one orange and one lemon, cut 1/8 x 2-inch strips, being careful not to cut into the bitter white pith. Set aside. From the same orange and lemon squeeze a total of 2 tablespoons juice; set aside.
  • Thinly slice remaining orange and lemon; drizzle slices with 1 tablespoon olive oil. Place on baking sheet lined with parchment paper; set aside.
  • Wash asparagus; break off woody bases at the point where the spear easily bends. Place spears in a 15x10x1-inch baking pan. Sprinkle with garlic, tarragon, and citrus strips. Drizzle with 2 tablespoons olive oil; toss to coat spears. Spread in a single layer and season with salt and pepper.
  • Roast asparagus and citrus slices 12-15 minutes, turning once or twice with tongs, until asparagus is tender and citrus begins to brown. Transfer to a serving platter.
  • Meanwhile, for vinaigrette, in small dish whisk together reserved juices and remaining 2 tablespoons oil; season with salt and pepper. Drizzle over roasted asparagus, citrus, and garlic. Sprinkle with roasted citrus slices. Serve warm.

BAGNA CAUDA

Bagna Cauda image

When I first tasted Bagna Cauda, I swooned. A heavenly, warm garlicky sauce and lots of fresh vegetables to dip into it. Boy do the Italians know how to live! It is traditional to dip little 'mops' of crusty bread to finish up the sauce if there's any left after the vegetables are finished.

  • Choose the right asparagus: Look for asparagus spears that are firm and have tight tips. Avoid spears that are limp or have woody ends.
  • Char the asparagus properly: To get the best flavor and texture, char the asparagus over high heat until it is slightly blackened and tender. You can do this in a grill pan, on a grill, or under a broiler.
  • Make the citrus bagna cauda ahead of time: This sauce can be made up to 2 days ahead of time and stored in the refrigerator. When you're ready to serve, just rewarm it gently over low heat.
  • Serve the dish immediately: Charred asparagus is best served immediately, while it is still warm and crispy. The citrus bagna cauda will help to keep the asparagus moist and flavorful.
