CARAMEL AND CHEDDAR POPCORN MIX

Caramel and Cheddar Popcorn Mix image

Provided by Molly Yeh

Time 50m

Yield 2 to 4 servings

Number Of Ingredients 12

3 tablespoons unsalted butter
9 cups popcorn (from about 1/3 cup kernels)
3 tablespoons Cheddar cheese powder
1 teaspoon mustard powder
Nonstick cooking spray, for greasing the pan
1/2 cup dark brown sugar
1/3 cup light corn syrup
4 tablespoons unsalted butter
1 teaspoon kosher salt
1 teaspoon vanilla extract
1/4 teaspoon baking soda
9 cups popcorn (from about 1/3 cup kernels)

Steps:

  • For the Cheddar popcorn: Melt the butter in a large heavy-bottomed pot over medium-high heat. Remove from the heat and fold in the popcorn to coat. Sprinkle in the cheese powder and mustard powder. Fold together to evenly coat. Transfer to a large serving bowl.
  • For the caramel popcorn: Preheat the oven to 300 degrees F. Line a baking sheet with foil and generously spray with nonstick spray.
  • Wipe the large pot clean of any excess popcorn residue. Add the brown sugar, corn syrup and butter to the same pot and bring to a boil over medium-high heat, stirring constantly, about 3 minutes. Reduce the heat to medium and continue to let it boil, without stirring, until it turns a deep golden brown, 4 to 5 minutes.
  • Remove from the heat and stir in the salt, vanilla and baking soda. Gently fold in the popcorn until well coated (spraying a rubber spatula works well, here!). Transfer the popcorn to the prepared baking sheet and bake until the caramel has melted around the popcorn and nicely coats the kernels all over, about 10 minutes. Let cool completely on the baking sheet, about 10 minutes. Break into pieces and add to the serving bowl.

CAULIFLOWER POPCORN

Cauliflower Popcorn image

Small florets of cauliflower look a lot like popcorn, and when coated with classic popcorn seasonings, they can be just as snackable. Roast pieces the size of popped kernels until deeply tender and frizzled, shower with panko bread crumbs seasoned with nutritional yeast, then return to the oven to toast. The panko mimics the airy crispness of popcorn, while nutritional yeast adds a cheesy, salty flavor. Adjust seasonings based on what you like: Add wet ingredients, like hot sauce or soy sauce, to the cauliflower before roasting, and dry ingredients, like Old Bay, furikake or Tajín, when you add the panko.

Time 40m

Yield 4 servings

Number Of Ingredients 6

2 pounds cauliflower, cut into ½- to 1-inch pieces and florets
1/3 cup plus 1 tablespoon extra-virgin olive oil or melted ghee
1/4 cup nutritional yeast
1/4 teaspoon red-pepper flakes or pinch of ground cayenne
Kosher salt and black pepper
1/2 cup panko bread crumbs

Steps:

  • Heat the oven to 450 degrees. On a sheet pan, toss the cauliflower with ⅓ cup olive oil, 1 tablespoon nutritional yeast and the red-pepper flakes. Season generously with salt and pepper, then toss well to evenly distribute. Spread in an even layer and roast for 20 minutes, until the cauliflower is crisp-tender and starting to brown at the edges.
  • Meanwhile, in a small bowl, stir together the panko, remaining 3 tablespoons nutritional yeast and remaining tablespoon olive oil. Season with salt and pepper, and stir with a fork until evenly combined.
  • When the 20 minutes are up, stir the cauliflower, spread it into an even layer and sprinkle with the panko mixture. Roast until the panko is toasted, 10 to 12 minutes.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is firm and has tightly packed florets. Avoid any heads that have brown or yellow spots, as these are signs of spoilage.
  • Cut the cauliflower into small florets: The smaller the florets, the better they will resemble popcorn. You can use a sharp knife or a food processor to cut the cauliflower into florets.
  • Coat the cauliflower florets in oil and seasonings: This will help them to get crispy in the oven. You can use any type of oil you like, but olive oil or avocado oil are good choices. As for seasonings, you can use a simple salt and pepper combination, or you can get creative with garlic powder, onion powder, paprika, or chili powder.
  • Bake the cauliflower florets until they are crispy: This will usually take around 20 minutes, but the exact time will depend on the size of the florets and your oven. Keep an eye on them so that they don't burn.
  • Serve the cauliflower popcorn immediately: It is best enjoyed fresh out of the oven. You can serve it with your favorite dipping sauce, such as ranch dressing or blue cheese dressing.

Conclusion:

Cheddar cauliflower popcorn is a delicious and healthy snack that is perfect for parties, potlucks, or movie nights. It is easy to make and can be tailored to your own taste preferences. With its cheesy flavor and crispy texture, cheddar cauliflower popcorn is sure to be a hit with everyone who tries it.
