2 tablespoons sugar
1 tablespoon salt
1 package (1/4 ounces) active dry yeast
2 cups 2% milk
1 tablespoon butter
2 cups shredded cheddar cheese
1 large egg white, beaten

  • In a large bowl, combine 2 cups flour, sugar, salt and yeast. In a saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in cheese and enough remaining flour to make a soft dough. Do not knead. 1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 pound (2 sticks) unsalted butter, cut into small pieces
1 cup freshly grated sharp cheddar

Steps:

  • Combine flour, salt, and spices in a food processor. Add butter and process until mixture resembles coarse meal.
  • Add cheese and process until dough starts to hold together. Turn out onto a lightly floured surface. Divide in half, and roll into logs about 1 1/2 inches in diameter. Wrap in plastic, and chill until firm, at least 1 hour.

  • Process pecans, flour, and cornstarch in food processor until finely ground. Add remaining ingredients and pulse until dough forms. Turn dough out onto lightly floured surface and roll into two 8-inch logs. Wrap tightly with plastic wrap and refrigerate until firm, at least 1 hour or up to 3 days.
  • Adjust oven racks to upper-middle and lower-middle positions and heat oven to 400 degrees. Line 2 baking sheets with parchment paper.   • Preheat the broiler to 425 degrees F.
  • With a 2 1/8-inch cookie cutter, cut 2 rounds out of each slice of bread. Arrange the rounds on a baking sheet and place 5 inches from the heat source. Toast the bread on one side until they are golden brown, 3 to 5 minutes.
