This is delicious and lower-fat than most creamy soups as it has no cream in it. I have adapted it from a number of broccoli soups and added chicken (use pre cooked to save time) to make it a more complete meal. Perfect winter comfort food!

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and prevent any scrambling during the cooking process.
  • Use high-quality ingredients: The better the quality of your ingredients, the better your soup will taste. Look for fresh, organic produce and free-range chicken.
  • Don't overcrowd the pot: When you add the chicken and vegetables to the pot, make sure there is enough room for them to move around. If the pot is too crowded, the ingredients will not cook evenly.
  • Simmer, don't boil: Bring the soup to a boil, then reduce the heat to low and simmer for at least 30 minutes. This will allow the flavors to develop and deepen.
  • Season to taste: Once the soup is done simmering, taste it and adjust the seasonings as needed. You may need to add more salt, pepper, or herbs.

Conclusion:

Cheddar chicken soup is a delicious and comforting dish that is perfect for a cold winter day. It is also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can easily make a delicious pot of cheddar chicken soup at home.
