My sister shared the recipe for this fresh crunchy salad seasoned with dill. It's handy because you can assemble and eat it right away...or cover and refrigerate it to take to a picnic or potluck the next day. The longer it chills, the more tangy it is. -Anna Emory-Royal Murfressboro, Tennessee

CHEDDAR DILL AND VEGGIE PASTA SALAD

Cheddar Dill and Veggie Pasta Salad image

Great summer side salad. I use extra sharp cheddar, because in my world, the sharper the better. The recipe calls for fresh dill, which I never have on hand so I always use dry, probably about 1 teaspoon, to taste. I do not remember where I got this, oops, so if someone knows, please let me know so I can put it here! Time to chill not included in cooktime.

Tips:

  • Prep veggies in advance: To save time, wash and chop the vegetables the day before or in the morning before you plan to make the pasta salad.
  • Use a variety of vegetables: This will give your pasta salad more flavor and texture. Some good options include broccoli, cauliflower, carrots, celery, cucumbers, bell peppers, and tomatoes.
  • Cook the pasta al dente: This means that the pasta should be cooked through but still have a slight bite to it. Overcooked pasta will become mushy in the pasta salad.
  • Use a good quality cheese: The type of cheese you use will make a big difference in the flavor of your pasta salad. Use a sharp cheddar cheese for a bold flavor or a mild cheddar cheese for a more subtle flavor.
  • Add some fresh herbs: Fresh herbs like parsley, basil, or thyme will add a pop of flavor to your pasta salad.
  • Dress the pasta salad just before serving: This will help to prevent the pasta from getting soggy.

Conclusion:

Cheddar dill and veggie pasta salad is a delicious and refreshing side dish that is perfect for picnics, potlucks, and summer gatherings. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the perfect pasta salad every time.
