1 ½ pounds ground beef
1 ⅓ cups dry bread crumbs
1 egg, slightly beaten
½ onion, finely chopped
¼ cup milk
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh garlic
1 ½ teaspoons Italian seasoning
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon butter
1 yellow onion, chopped
1 (6 ounce) package portobello mushroom caps, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, bread crumbs, egg, 1/2 a chopped onion, milk, Worcestershire sauce in a bowl; season with garlic, Italian seasoning, dry mustard, salt, and black pepper. Transfer the meat mixture to a piece of waxed paper or aluminum foil and flatten to a 1/2-inch thick rectangle.
  • Melt butter in a skillet over medium heat. Cook and stir yellow onion and mushrooms in melted butter until the onion is translucent and mushrooms soft, about 5 minutes. Remove from heat to cool.
  • Spread filling mixture into center of meat rectangle. Sprinkle Cheddar cheese over filling, leaving a bit of space at one end for easier rolling and sealing. 3/4 cup crushed Ritz crackers, about 17 crackers
1 1/2 cups sweet and tangy barbecue sauce, divided use
4 oz cheddar cheese, sliced into 1/4 inch pieces.

Steps:

  • Place ground beef in a large mixing bowl, add beaten eggs, 1 cup of barbecue sauce and crushed crackers.
  • Mix together until well combined.
  • To cook direct on the grill: line a pan with parchment paper or butcher paper. Pour mixture onto paper and form into a loaf. Alternately: Form meatloaf on a grill pan that you can just set on the grill.
  • Make an indent in the center of the loaf and fill with cheese. Press meat mixture together, sealing over cheese.
  • Prepare a grill or smoker to 300° with hickory wood.
  • Fold paper into a roll over meatloaf. Gently unroll onto grill or if using grill pan, place over indirect fire.
  • Close the lid and cook 30 minutes.
  • Brush meatloaf over top and sides with remaining barbecue sauce.
  • Continue to cook with the lid closed until internal temperature reaches 160°, about 15 minutes.

1 1/2 lbs ground beef
26 -28 ounces spaghetti sauce, ragu chunky garden style is what I recommend
1 egg
1/4 cup plain breadcrumbs
2 cups of shredded mozzarella cheese
1 tablespoon finely chopped fresh parsley
salt and pepper, however much desired
wax paper

Steps:

  • Preheat oven to 350°F.
  • In large bowl mix beef, 1/3 cup of sauce,egg, and bread crumbs.
  • Season with salt and pepper.
  • Roll out wax paper on table and flatten mixture on it.
  • Shape into a rectangle.
  • Sprinkle 1 1/2 cups of cheese and parsley down center leaving 3/4 inch border.
  • Then roll the meatloaf like a jelly roll tightly and be sure when rolling to pull the wax paper off.
  • Press and seal the ends closed put in to pan.
  • Bake uncovered 45 minutes. Pour remaining sauce and cheese on top and bake an additional 15 minutes or until cheese is melted.
