½ cup mayonnaise
1 teaspoon Cajun seasoning
1 ⅓ pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
½ cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato

Steps:

  • Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
  • In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
  • Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.

8 bacon strips, chopped
2 pounds ground beef
1/2 large red onion, chopped
12 ounces uncooked spiral pasta
4 cups chicken broth
2 cans (15 ounces each) crushed tomatoes
1 can (8 ounces) tomato sauce
1 cup water
1/4 cup ketchup
3 tablespoons prepared mustard
2 tablespoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
1/3 cup chopped dill pickle
Optional: Chopped tomatoes, shredded lettuce, sliced pickles and sliced red onion

Steps:

  • In a 6-quart stockpot, cook bacon over medium heat, stirring occasionally, until crisp, 6-8 minutes. Remove with a slotted spoon; drain on paper towels. Discard drippings. , In the same pot, cook ground beef and onion over medium heat until meat is no longer pink, breaking into crumbles, 6-8 minutes; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; simmer, covered, until pasta is al dente, stirring occasionally, about 10 minutes. , Stir in 1 cup cheese, pickle and bacon; cook and stir until cheese is melted. 1 cup tomato sauce
2 tablespoons light brown sugar
3 tablespoons chipotle in adobo paste, puréed
2 tablespoons cider or white wine vinegar
1 tablespoon Worcestershire sauce
12 slices bacon, 4 slices finely chopped
A drizzle of EVOO - Extra Virgin Olive Oil
1/2 small onion, chopped
2 jalapeño peppers, chopped
4 cloves garlic, chopped
1 1/2 pounds ground beef
1/2 tablespoon cumin, half a scant palmful
1/2 tablespoon ground coriander, half a palmful
1 tablespoon smoked sweet paprika, a scant palmful
1 teaspoon Mexican oregano
4 slices smoked or sharp cheddar
4 slices Pepper Jack cheese
4 crusty burger rolls, split and toasted
Lettuce and red onions, for topping

Steps:

  • Preparation Place ketchup ingredients in a small pot and simmer 20 minutes over low heat to thicken. Heat oven to 375ºF and bake 8 slices of bacon on slotted pan to crisp. Heat a drizzle of EVOO in a skillet, add chopped bacon and cook to crisp. Remove to a paper towel-lined plate to drain, leaving 2 tablespoons drippings in the pan. Cook onions, jalapeños and garlic in the drippings to soften, 7-8 minutes. Let cool. Place meat in bowl, add chopped bacon, cooled onions and jalapeños, cumin, coriander, paprika, oregano, salt and pepper. Form 4 patties and cook in the skillet over medium-high heat 8-12 minutes, turning once, for medium to well-done. Melt 1 slice of each cheese over each burger during the last minute or 2. 1/4 lb hamburger

1 small yellow onion, chopped

1 tablespoon sweet smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander

4 slices smoked cheddar cheeseor sharp cheddar cheese
4 slices monterey jack cheese or 4 slices monterey jack pepper cheese
4 crusty burger rolls, split and toasted
lettuce leaf, and red onion slices for serving
1 cup tomato sauce
3 tablespoons pureed chipotle chiles in adobo
2 tablespoons light brown sugar
2 tablespoons vinegar
1 tablespoon Worcestershire sauce

Steps:

  • To Make The Chipotle Ketchup: In a saucepan, combine all of the ingredients. Simmer over low heat until thickened, about 20 minutes. (Store in the refrigerator for up to 1 week.)
  • Preheat the oven to 400 degrees . Place the 8 whole slices of bacon on a broiler pan. Bake in the oven until crisp, about 15 minutes.

1 1/4 lbs 80% lean ground beef
3 -4 tablespoons grated onions
2 garlic cloves, finely chopped
2 tablespoons pureed chipotle chiles in adobo
2 tablespoons Worcestershire sauce

extra virgin olive oil
3 tablespoons butter
2 tablespoons flour
1 cup milk
1 1/2 cups shredded cheddar cheese
1 (14 ounce) can diced tomatoes with green chilies, well drained
4 soft burger rolls, split
crisp yellow corn chips
chopped onion, tomatoes, cilantro, and pickled jalapenos
