⅔ cup butter
⅔ cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

When it comes to choosing which desserts I'm going to add to my arsenal of recipes, I almost always stick to the unfussy classics -- cakes, cookies, bars, and, in this case, cheesecake cookie bars! This recipe blends the dense, pan-baked goodness of a bar with layers of cheesecake and cookie dough that are dotted with white chocolate and fresh raspberries. There is no bake-off or bake sale that you can't win with these.

1 cup (2 sticks/225 g) unsalted butter, at room temperature
1/2 cup (110 g) brown sugar
1 1/2 cups (300 g) granulated sugar
2 large eggs
2 1/2 teaspoons vanilla extract
2 1/2 cups (315 g) all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cups (205 g) white chocolate chips
1 cup (125 g) fresh raspberries
8 ounces (225 g) cream cheese, at room temperature
1/2 cup (100 g) granulated sugar
1 large egg
1 teaspoon vanilla extract

Steps:

  • To make the cookie layer: In a stand mixer, cream together the butter, brown sugar, and granulated sugar for 3 minutes, until smooth. Add the eggs and vanilla and continue to mix, scraping down the sides of the bowl. Add the flour, salt, baking soda, and baking powder and mix on low speed until the ingredients are incorporated. Fold in 1 cup (165 g) of the white chocolate chips.
  • To make the cheesecake layer: In a food processor, combine the cream cheese, granulated sugar, egg, and vanilla and mix for 2 minutes, scraping down the sides as needed, until the ingredients are evenly combined and the mixture is very smooth.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9 by 13-inch (23 by 33-cm) baking pan with parchment paper with a little hanging over the sides. Press slightly more than half of the cookie dough mixture into the bottom of the pan to make one even layer. Spread the cheesecake mixture on top of the cookie dough. Crumble the remaining cookie dough and sprinkle it on top of the cheesecake mixture, then sprinkle with the remaining 1/4 cup (40 g) white chocolate chips and the raspberries.
  • Place in the oven and bake for 40 to 45 minutes, until the cookie dough is golden brown. Remove the bars from the oven and let cool for 30 minutes. Transfer them to the fridge for at least 2 hours, or overnight if time allows (don?t skip this part). Cut into bars and serve.

1 1/2 cups graham cracker crumbs
5 tablespoons butter, melted
3/4 cup miniature semisweet chocolate chips
10 ounces cream cheese, softened
1/4 cup sugar
1 egg, room temperature
1 teaspoon vanilla extract
5 tablespoons butter, softened
1/4 cup brown sugar, packed
3 tablespoons sugar
1 teaspoon vanilla extract
1 dash salt
1/2 cup all-purpose flour
1 cup semi-sweet chocolate chips
1/4 cup semi-sweet chocolate chips, melted

Steps:

  • Heat the oven to 350ºF.
  • Line a 9x9-inch baking pan with foil, leaving extra foil extending over the edges.
  • Spray the foil with nonstick cooking spray.
  • In a medium bowl, stir together graham cracker crumbs and melted butter until crumbs are moistened.
  • Stir in the miniature chocolate chips.
  • Press into the bottom and 1-inch up the sides of the pan.

  • Drop teaspoonfuls of the dough over the filling.
  • Bake for 30-35 min or until the top feels dry and looks set when shaken gently.
  • Cool completely on a wire rack.
  • Dip a fork into the melted chocolate chips and drizzle over the top of the bars.
  • Let stand until set.
  • Using the foil edges, lift bars from the pan; peel away the foil.
  • Cut into 16 pieces and serve at room temperature.
  • Cover and refrigerate any leftovers.

2 c all-purpose flour
3/4 c butter chopped
1/2 c powdered sugar
1/4 c packed light brown sugar
1-2 Tbsp milk as needed
1 zest of a lemon
CHEESECAKE
16 oz softened cream cheese ( 2 packages)
2 eggs
1/2 c granulated sugar
1 tsp lemon zest, grated
1 Tbsp lemon juice
20 ounce can(s) blueberry pie filling
OPTIONAL HOMEMADE BLUEBERRY FILLING
2 pt blueberries
1 c water
3/4 c sugar granulated
1/2 tsp lemon zest, grated
1 Tbsp lemon juice, fresh
1 dash(es) cinnamon

Steps:

  • 1. Optional homemade blueberry filling: Skip if using canned filling. Place water, sugar, cinnamon , lemon zest, and lemon juice in a saucepan with blueberries. Bring to a boil. Mix corn starch with 2 TBs water.until disolved Add to blueberry mixture. IStir constantly until mixture boils and filling has thickened. Remove from heat .Cool and Refrigerate.
  • 2. Heat oven to 350 degree's. Line a 9x13 inch pan with foil or parchment paper. Grease pan before lining. Spray or grease foil or parchment afterwards.
  • 3. Place butter, flour, powdered sugar, brown sugar and lemon zest in food processor. Pulse until dough comes together. Empty in to a bowl. If it is really dry. Add 1 tablespoon of milk and knead with hands until a nice smooth ball forms.
  • 4. Place dough in lined pan. Spread dough evenly with hands on bottom of pan and partly up the inside walls of pan. Bake for 10 minutes or until edges are just starting to brown. Do not over bake. It will bake more later. Remove from oven. Set aside to cool.
  • 5. In a bowl beat the cream cheese and granulated sugar together until smooth. Beat in 1 egg at a time. Beat until egg are incorporated. Add the lemon juice, lemon zest. Beat until mixed in, and mixture is fluffy. Pour over crust.
  • 6. Place spoonfuls of blueberry filling on top scattered. Run a knife through filling to swirl filing in. Do not hit crust with knife.
  • 7. Place in oven and bake about 30- 40 minutes or until cake is not jiggly. Test with pick. Cooll and cut in to squares and Refrigerate. You may top with more blueberry filling if desired. This is designed to be a hand held cookie dessert.

  • To make chocolate chip cookie layer: Melt butter and let cool to warm. Add in brown sugar and mix to combine. Add in egg and vanilla extract and mix to combine. Add in flour and fold to combine. 1 pkg refrigerated peanut butter cookie dough (roll)
1 pkg refrigerated chocolate chip cookie dough (roll)
2 - 8oz pkg cream cheese - softened
1 c sugar
3 eggs
2 tsp vanilla

Steps:

  • 1. Heat oven to 350 degrees. Spray 13X9-inch pan with cooking spray. Break up peanut butter cookie dough into 3 pieces. (one on each end and one in the middle) Press dough evenly in bottom of pan to form crust. (*HINT* I put a plastic bag over my hand to avoid the cookie dough sticking to me - worked great!)
  • 2. In small bowl with electric mixer, beat cream cheese and sugar on medium speed until blended. Add eggs, one at a time, beating after each addition until smooth. Stir in vanilla. Pour mixture over cookie crust in pan. Break chocolate chip cookie dough into small pieces; evenly drop pieces over cream cheese mixture. (again I used a plastic bag over my hand to prevent the cookie dough from sticking)
  • 3. Bake 40 to 45 minutes or until top is lightly browned and cheesecake is set. Cool 30 minutes. Refrigerate about 2 hours or until chilled before serving.
