Inspired by the popular Mexican pastry, Sopapilla Cheesecake Bars are a cinnamon sugar cheesecake dessert featuring a sweet cream cheese filling, crunchy-sweet topping and flaky crescent crust. Steps:
- Heat oven to 350°F.
- Unroll 1 can dough. Place in bottom of ungreased 13x9-inch (3-quart) glass baking dish. Stretch to cover bottom of dish, firmly pressing perforations to seal.
- In medium bowl, beat cream cheese and 1 cup of the sugar with electric mixer on medium speed until smooth. Beat in vanilla. Spread over dough in baking dish.
- Unroll second can of dough. Firmly press perforations to seal. Carefully place on top of cream cheese layer. Pinch seams together.
- Pour melted butter evenly over top. Mix remaining 1/2 cup sugar with the cinnamon, and sprinkle evenly over butter.
- Bake 30-35 minutes or until bars appear set when gently shaken. Cool slightly, about 30 minutes. Refrigerate for easy cutting. Cut into 4 rows by 3 rows. Cover and refrigerate any remaining bars.

- In a large bowl, combine softened cream cheese, sugar, and vanilla extract until well-incorporated.

This recipe has been around the world and back. It is a wonderful dessert to top off that Mexican meal. Everybody loves it! Had to share just in case you have eaten it but didn't have the recipe to try it for yourself. :) It makes a great breakfast too!

- 1. Preheat oven to 350F.
- 2. Spray a 9 x 13 pan with cooking spray. Unroll and press 1 can crescent rolls into the bottom of your baking dish press the seams together.
- 3. In a separate bowl blend the cream cheese, 1 cup sugar and 1 tsp vanilla. Spread over top of dough.
- 4. Unroll the second can of crescent rolls and place on top of the cream cheese mixture pressing seams together again.
- 5. Melt butter and pour over top layer of crescents. Mix the remaining 1/2 cup of sugar & cinnamon together. Sprinkle cinnamon sugar mixture generously over the top.
- 6. If you don't think that's enough cinnamon sugar on top add more its really up to you there's no rules on this part of the recipe.
- 7. Bake at 350F for 30 minutes until bubbly and bottom crust is slightly brown. Cool, slice and enjoy!

- 1. Preheat oven to 375 degrees.
- 2. Spray 9X13 pan with non stick spray. Unroll one can of cresent rolls and place in pan. Seal up the holes and press to fit the entire bottom. Mix sugar, cream cheese and vanilla until well blended appox. 2 minutes. Spread on dough. Cover with 2nd can of rolls. Close up holes again and stretch to cover cream cheese mixture. Pour melted butter over top. Make sure it gets smeared over the entire dough, then sprinkle cinnamon sugar mixture over top.
- 3. Bake for 25-30 minutes until the dough is lightly browned. When removed from oven drizzle with honey. Allow to cool for at least 15 minutes. ENJOY!!!
