EASIEST & CHEESIEST MACARONI AND CHEESE

Easiest & Cheesiest Macaroni and Cheese image

This is my personal recipe. I love Stouffer's mac and cheese and I decided to take a chance at making my own. This is pretty close and in a house of picky eaters, the first time I made it--it was gone in minutes. I have a rather large family, so you can halve the recipe to make for a smaller family. Also the larger recipe is good if you want to serve as a meal.

Easiest and Cheesiest Stove Top Macaroni and Cheese image

This is my Grandmother's recipe. I have no idea where it originated, but I don't ever remember a family gathering growing up when this was not served. It is not a gourmet macaroni and cheese, but it is fast and good. The only thing anyone ever says after eating it is "May I have some more please?".

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 8

1 lb macaroni
4 cups milk
1 1/2 lbs cheddar cheese, shredded
1 lb mozzarella cheese
4 teaspoons flour
1/2 cup butter
1/2 medium onion, diced small
salt and pepper

Steps:

  • Preheat oven to 350°F
  • Cook macaroni according to package directions; drain.
  • In a medium pot, heat butter and saute onions. Add milk, flour, salt and pepper. Bring to rolling boil. Slowly add cheddar cheese; stirring while adding. After cheddar cheese had dissolved, add the mozzarella cheese, stirring while adding.
  • Add macaroni directly to the cheese mixture in the pot. Pour into a large, greased lasagna pan. Bake for 30 minutes or until top is bubbly and golden brown.

Tips:

  • Use a good quality cheese: The type of cheese you use will greatly affect the flavor of your macaroni and cheese. Use a sharp cheddar cheese for a bold flavor, or a mild cheddar cheese for a more subtle flavor. You can also use a combination of cheeses, such as cheddar, mozzarella, and Parmesan, for a more complex flavor.
  • Cook the macaroni al dente: The macaroni should be cooked al dente, or slightly firm to the bite. This will prevent it from becoming mushy when it is baked in the cheese sauce.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the cheese sauce. Making a roux will help to prevent the cheese sauce from becoming thin and runny.
  • Use milk or cream: Milk or cream is used to make the cheese sauce. The type of milk or cream you use will also affect the flavor of the macaroni and cheese. Whole milk will produce a richer, creamier sauce, while skim milk will produce a lighter sauce.
  • Season the cheese sauce: Be sure to season the cheese sauce with salt, pepper, and other spices to taste. This will help to enhance the flavor of the cheese sauce.
  • Top with breadcrumbs: Topping the macaroni and cheese with breadcrumbs before baking will give it a crispy, golden brown crust.
  • Bake until bubbly: Bake the macaroni and cheese until it is bubbly and the cheese sauce is melted and smooth.
