1 1/2 c baking mix
1 1/2 c milk
4 eggs

Steps:

  • 1. HEAT OVEN TO 375F. SPRAY AN 11X7 COOKING DISH. IN 12 INCH SKILLET, COOK BACON UNTIL CRISP. DRAIN ON PAPER TOWELS.
  • 2. IN SMALL BOWL, MIX APPLE AND SUGAR; SPREAD IN BAKING DISH. IN MEDIUM BOWL, STIR BISQUICK MIX, MILK AND EGGS UNTIL BLENDED; POUR OVER APPLES. SPRINKLE WITH CHEESE AND CRUMBLED BACON.

1 large apple, peeled and chopped (I use Granny Smith or Golden Delicious)
2 tablespoons brown sugar
1 1/2 cups bisquck baking mix
1 1/2 cups milk
4 eggs
2 cups shredded cheddar cheese
1 lb apple smoked bacon, cooked and crumbled

Steps:

  • Heat oven to 375°F Grease 9x9 square pan.
  • Mix apple chunks and brown sugar and spread in bottom of baking dish.
  • Stir baking mix, milk and eggs until blended and pour over apples.
  • Sprinkle with cheese and bacon.
  • Bake uncovered 30 - 35 minutes or until knife inserted into center comes out clean.

4 slices bread, crusts removed
1 ½ cups skim milk
1 cup egg substitute (such as Egg Beaters®)
1 tablespoon chopped fresh chives
6 slices cooked bacon, crumbled
1 cup Cheddar cheese

Steps:

  • Spray a 9-inch square baking dish with cooking spray. Place bread slices in a single layer in the bottom of the prepared baking dish.

I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!
