4 teaspoons softened butter
4 hamburger buns, split
Coarse salt and ground pepper
4 slices melting cheese, such as American or mild cheddar
Toppings, such as shredded iceberg lettuce, pickle chips, thinly sliced red onion, mustard, ketchup, and mayonnaise

Steps:

300g breadcrumbs
140g extra-mature or mature cheddar , grated
4 tbsp Worcestershire sauce
1 small bunch parsley , finely chopped
2 eggs , beaten
split burger buns
sliced tomatoes
red onion slices
lettuce , tomato sauce, coleslaw, wedges or fries

Steps:

  • Crumble the mince in a large bowl, then tip in the breadcrumbs, cheese, Worcestershire sauce, parsley and eggs with 1 tsp ground pepper and 1-2 tsp salt. Mix with your hands to combine everything thoroughly.
  • Shape the mix into 12 burgers. Chill until ready to cook for up to 24 hrs. Or freeze for up to 3 months. Just stack between squares of baking parchment to stop the burgers sticking together, then wrap well. Defrost overnight in the fridge before cooking.

1/4 cup ripe olives, chopped
2 tablespoons ripe olives, chopped
1/8 teaspoon hot sauce
1 3/4 lbs ground chuck
1/4 cup onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
6 slices monterey jack cheese

Steps:

  • Combine the 1 1/2 cups shredded Monterey Jack cheese, ripe olives (1/4 cup plus 2 tbsp) and hot sauce. Shape the cheese/olive mixture into 6 balls. Set aside.
  • Combine the ground chuck, onion, salt, and pepper. Stir well and shape into 12 patties.
  • Place a cheese ball in the center of 6 patties; flatten the cheese balls slightly. Top with the remaining 6 patties, pressing the edges to seal. Make sure you seal these well.
