16 ounces dry ziti pasta
1 lb Polish sausage, sliced diagonally
2 tablespoons oil
3 (14 1/2 ounce) cans Italian-style stewed tomatoes
3 (8 ounce) cans tomato sauce
1 teaspoon dried oregano
1/4 cup chopped fresh parsley
1/2 teaspoon ground black pepper
1/4 cup Italian style breadcrumbs
8 ounces shredded monterey jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • Bring large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 minutes over mediun-high heat or until al dente.
  • Drain Pasta.
  • In a mediun skillet over medium-high heat, Cook sausage in oil until browned on both sides, 5 minutes.
  • In a large bowl, combine Ziti,sausage,stewed tomatoes,tomato sauce,oregano,parsley and pepper.
  • Mix well.
  • Pour into 9x13 baking dish.
  • Sprinkle with bread crumbs and shredded cheese.
  • Cover with foil (the new Release foil works great).
  • Bake 30 minutes.
  • Remove foil and bake 10 to 15 minutes more, until top is golden.

12 ounces uncooked elbow macaroni
2 pounds kielbasa or Polish sausage, halved lengthwise and sliced
1 tablespoon olive oil
2 medium onions, chopped
2 medium zucchini, quartered and sliced
2 medium carrots, grated
1/2 teaspoon minced garlic
1 jar (26 ounces) spaghetti sauce
1 can (14-1/2 ounces) stewed tomatoes
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
2 green onions, chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni., In a small bowl, combine egg and ricotta cheese. 1 tablespoon olive oil
½ cup chopped onion
1 teaspoon minced garlic
1 pound kielbasa sausage, sliced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (4 ounce) can sliced mushrooms
1 teaspoon white sugar
1 teaspoon balsamic vinegar
kosher salt and ground black pepper to taste
1 pinch crushed red pepper, or to taste
1 (16 ounce) package penne pasta
1 cup frozen peas
3 leaves fresh basil, julienned, or more to taste
1 cup shredded Cheddar-Monterey Jack cheese blend

  • Bring a large pot of lightly salted water to a boil for pasta.
