CREAMY PIZZA MACARONI AND CHEESE

Creamy Pizza Macaroni and Cheese image

You could call this mac and cheese a mash-up: It tastes just like pizza! We love using the oil from sun-dried tomatoes to make the topping. Don't throw it out- it's also great drizzled on toasted bread or pasta.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 14

Kosher salt
1 pound elbow macaroni
2 1/2 cups half-and-half
3/4 teaspoon dried oregano
1/2 to 1 teaspoon crushed red pepper
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces Gruyere, shredded (about 1 cup)
1/2 cup prepared marinara sauce
1/2 cup sun-dried tomatoes packed in olive oil, roughly chopped, and 1/4 cup sun-dried tomato oil
1/2 cup sun-dried tomatoes packed in olive oil, roughly chopped, and 1/4 cup sun-dried tomato oil
3 ounces pepperoni, thinly sliced into 1/4-inch rounds
1 cup Italian bread crumbs
1/4 cup grated Parmesan

Steps:

  • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Heat the half-and-half, oregano and crushed red pepper in a large saucepan over medium heat until the mixture just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and reserved pasta water to the saucepan and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently stir in the marinara sauce, sun-dried tomatoes and pepperoni and season with more salt if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs, Parmesan and sun-dried tomato oil together in a small bowl and sprinkle evenly over the macaroni and cheese. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

MACARONI AND CHEESE PIZZA

Macaroni and Cheese Pizza image

Provided by Aaron McCargo Jr.

Time 1h15m

Yield 1 pizza

Number Of Ingredients 17

1/2 pound dried rotini pasta
Olive oil cooking spray
6 slices thick-cut good quality bacon
2 tablespoons unsalted butter
1 white onion, finely chopped
1 clove garlic, finely chopped
Pinch ground nutmeg
Salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 cups whole milk
2 cups grated sharp Cheddar
1 cup grated mozzarella
1 cup panko breadcrumbs
1/2 cup Parmesan
3 tablespoons chopped fresh chives
1 tablespoon olive oil
1 store-bought pizza dough, rolled out and spread on a well-oiled baking sheet

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of water to a boil and cook the rotini al dente. Drain and spray with olive oil cooking spray, making sure the noodles are coated well. Set aside.
  • In a large saute pan over medium-high heat, cook the bacon until crispy. Remove to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon drippings and add the butter. Add the onions, garlic and nutmeg. Season the vegetables with salt and pepper and saute until the onions wilt and become translucent, about 4 minutes. Reduce the heat to medium-low and sprinkle in the flour, stirring to coat the onions and garlic. Continue to cook until you have a blond roux, about 5 minutes. Whisk in the milk until you have a thick enough sauce that it coats the back of a spoon. Crumble the bacon and add half to the sauce. Mix in the Cheddar and mozzarella. Turn the heat to low. Add the pasta to the cheese sauce and stir to coat. Cover and keep warm.
  • In a small bowl, add the breadcrumbs, Parmesan, chives and olive oil. Add the rest of the crumbled bacon and add it to the bowl, stirring well to combine.
  • Spray the pizza dough with the olive oil spray and place into the oven for 7 minutes. Remove from the oven and set down. Spread the macaroni and cheese on the pizza, being careful to leave a 1-inch border. Sprinkle with the breadcrumb mixture on the macaroni and cheese and bake in the oven for 10 minutes. Remove from the oven and let stand for 10 minutes to set the macaroni and cheese.
