CREAMY AND CHEESY BEEF AND BEAN CASSEROLE

Creamy and Cheesy Beef and Bean Casserole image

Taco seasoned ground beef, cheese, refried beans, all in a super-simple casserole. DH likes with chips, I also like it in tortillas. We like to use spicy salsa and taco seasoning, but use your preference.

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 lbs ground beef
3 garlic cloves, minced
1 (1 1/4 ounce) envelope taco seasoning (or homemade)
1 (32 ounce) can refried beans (again, homemade is great if you have the time)
1 (10 ounce) can cream of mushroom soup
1/3 cup salsa, of your choice plus 1/2-3/4 cup additional
2 cups shredded cheese (I use cheddar and a colby jack blend, then throw some crumbled queso fresco on top for good measure)
sliced jalapeno (optional)
sliced black olives (optional)

Steps:

  • Preheat oven to 350. Spray a 9x13 baking dish with vegetable oil spray; spread the refried beans in the bottom and set aside.
  • Brown the ground beef and garlic, drain, season with taco seasoning and stir in the cream of mushroom soup and the 1/3 cup salsa.
  • Layer on top of the beans: salsa, half of the cheese, the meat mixture, jalapeños and olives, if using, remaining cheese.
  • Bake for 30 minutes, and enjoy!

Tips:

  • Choose ripe avocados for a smooth and creamy guacamole.
  • Use fresh cilantro and lime juice for the best flavor.
  • Don't overcrowd the pan when cooking the chorizo, or it will steam instead of fry.
  • Use a good quality salsa, or make your own using fresh tomatoes, onions, and cilantro.
  • Serve the tostadas immediately, while the shells are still crispy.
  • For the Cheesy Refried Bean Casserole, use a block of cheddar cheese and grate it yourself. Pre-shredded cheese contains additives that can prevent it from melting smoothly.
  • Don't overcook the beans, or they will become dry and crumbly.
  • Top the casserole with a layer of sour cream or guacamole before serving.
  • For the Black Bean and Corn Salad, use fresh corn kernels. Canned corn can be used in a pinch, but it won't have the same flavor.
  • Add a variety of vegetables to the salad, such as chopped tomatoes, bell peppers, or onions.

Conclusion:

These Mexican recipes are all easy to make and packed with flavor. They're perfect for a weeknight meal or a casual get-together. So next time you're looking for something new to cook, give one of these recipes a try. You won't be disappointed!
