1 (10 ounce) package frozen chopped spinach, thawed and drained
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese
1 cup grated Parmesan cheese
2 cups diced Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press bottom pie crust into glass pie dish.
  • In a large bowl, combine the spinach, salt, pepper, nutmeg, ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix together well and pour into bottom pie crust. Place second pie crust on top of filling and trim edges.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes. Let stand 10 minutes and cut into wedges.

3 (10 ounce) bags clean fresh spinach, roughly chopped
1 ¼ cups heavy cream
¼ cup butter
2 tablespoons minced garlic
3 tablespoons minced white onion
6 slices shredded provolone cheese
½ cup freshly grated Parmesan cheese
salt and pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
  • Melt the butter in the skillet over medium heat. Add garlic and onions; cook and stir until tender, about 5 minutes. Add the spinach and stir in the heavy cream. 1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese

2 dashes Worcestershire sauce

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. 1/3 cup old-fashioned oats
7 tablespoons cold butter
2 to 3 tablespoons cold water

This recipe came out of my Sahtane Middle East cookbook. It calls for water, but I replaced the water with milk, and I liked it much better. Also, when I put the dough to rise for the second time, I put olive oil underneath the balls and coated them with olive oil as well. This gives the dough an extra kick of softness, and when it bakes it comes out incredibly delicious!! I am going to post the filling for these in a seperate recipe, but I believe this dough can also be used for pizza as well as a number of other things!

2 lbs flour
2 tablespoons butter or 2 tablespoons shortening
1 1/4 ounces yeast
1 tablespoon salt
2 cups lukewarm water, approximately (or as I used, Milk)
1/2 teaspoon sugar
olive oil

Steps:

  • Dissolve yeast in 1/4 cup warm water (or milk). Sprinkle with sugar, cover, and let rise.
  • In a large pan mix flour and salt. Add the yeast mixture and butter/shortening.
  • Gradually add the lukewarm water, mixing and kneading until dough is smooth and tender.
  • Cover with a blanket and put in a warm place for two hours or until dough rises.
  • Cut dough into pieces 2" to 2 1/2" in diameter. Form into balls by tucking the dough underneath the balls to make them round and smooth. Let rest for 30 minutes between blankets. (This is where I spread the olive oil under the dough, and coated the ball with olive oil as well. I also left it uncovered. ).
  • This dough is now ready to be used with various fillings. :).

2 pounds ground lamb, beef or chicken
3 tablespoons butter
1 tablespoon lemon zest
1 1/2 teaspoons dried Greek oregano or marjoram, half a palmful
4 cloves garlic, thinly sliced or chopped
2 medium onion, chopped
Salt and freshly ground black pepper
1/2 cup fresh flat-leaf parsley leaves and dill combined, finely chopped
2 round tablespoons flour
About 2 1/2 cups chicken stock
Juice of 1/2 lemon
One 10-ounce package organic chopped frozen spinach, wrung dry in kitchen towel
1 cup feta crumbles
1 sheet puff pastry
Flour, for rolling
1 egg, lightly beaten with splash of water

Steps:

  • For the filling:
  • Heat the EVOO in a Dutch oven over medium-high heat. Add the meat, brown and crumble. Remove the meat and drain off the fat. Melt the butter in the same pot and add the zest, oregano, garlic, onions and some salt and pepper. Cook to tender, 12 to 15 minutes. Then add the fresh herbs, stir. Add the flour, stir a minute or so and then whisk in the stock. Cook to thicken a little. Add the meat back in along with the lemon juice and spinach. Combine. Turn off the heat, cool and store for a make-ahead meal. Reheat over medium heat until hot. Stir in the feta crumbles just before serving.
  • For the puff pastry topper:
  • Preheat the oven to 425 degrees F. Flour a work surface and lightly roll out the puff pastry. Cut the size and shape of 1 large casserole or up to 6 individual bowls or large ramekins, using sharp paring knife. Place the dough on a nonstick baking sheet and wash with egg. Bake until evenly puffed and deep golden brown in color.
  • Serve the hot filling in a casserole dish or individual bowls topped with the pastry.

The filling amount should be plenty to stuff 14 shells with maybe a small amount left over --- to remove the bitterness from the spinach, cook firstly according to package directions --- to save time you may cook the ground beef/spinach mixture up to step #4 and refrigerate for up to 2 days. For easier stuffing, warm the mixture in the microwave to just room temperature before adding in the mozzarella cheese and eggs, then proceed with recipe as stated --- ground beef or bulk Italian sausage may be used successfully. 2/3 cup grated parmesan cheese, divided
3/4 lb lean ground beef (or use half ground beef and bulk italian sausage meat)
1 medium onion, finely chopped
2 -3 tablespoons fresh minced garlic (about 6 large cloves, minced)
1 (10 ounce) package frozen spinach (cooked according to package directions then hand-squeezed dry)
3/4 cup grated parmesan cheese
8 ounces ricotta cheese
1 cup shredded mozzarella cheese
2 large eggs, beaten (or use 3 small eggs)
1 -2 teaspoon seasoning salt
1 teaspoon fresh ground black pepper (or to taste)

Steps:

  • Grease two 9-inch baking pans.
  • In a large skillet over medium-high heat stirring with wooden spoon cook the ground beef or bulk sausage meat with the onion until browned breaking up the meat while cooking (about 10-12 minutes the meat should be lightly browned) drain fat.
  • Add in garlic and cook, stirring for 2 minutes.
  • Transfer to a bowl then mix in the drained spinach, Parmesan cheese and ricotta cheese; set aside to cool (about 10-15 minutes).
  • When the ground beef is cool add in mozzarella cheese, eggs, seasoned salt and black pepper mix well to combine, at this point you may season with more salt and pepper if desired and if you want more garlic flavor add in some garlic powder to the mixture.
  • Spread about 1/4 to 1/3 cup marinara sauce onto the bottom of each baking pan.
  • Carefully stuff each noodle with the beef mixture then place in one layer in the baking dish (you should have 7 in each dish).
  • FOR ONE PAN; drizzle about 1-1/2 cups (or more) marinara sauce over shells, sprinkle about 3/4 cup or more of mozzarella cheese over sauce, then sprinkle with 1/3 cup Parmesan cheese on top; repeat with remaining pan.
  • Preheat oven to 350 degrees F (oven rack to to lowest position).
  • Cover each pan with foil and bake 25 minutes, uncover and continue baking for another 8 minutes (allow to sit for about 15 minutes before serving).

2 -3 bunches fresh spinach
