This is really quick and SIMPLE "make ahead" dish for a holiday meal. The stuffing gives it a nice crunch on the top. Even though we used the "less fat" directions to make this dish, I think it was still full of great flavor. I also chose to use a "roasted garlic" flavor of stuffing mix, since that was the only one that did not contain chicken or turkey flavorings.

1 (6 ounce) package herb stuffing mix (I used roasted garlic flavor)
2 (10 ounce) packages frozen broccoli florets, thawed and drained
1 (10 3/4 ounce) can low-fat cream of mushroom soup
1 cup Velveeta cheese (low fat versions) or 1 cup Cheez Whiz (low fat versions)

Steps:

  • Preheat oven to 350°F.
  • Prepare stuffing mix according to package directions, using 3 Tbsp of butter instead of 4.
  • Heat cream of mushroom soup and Velveeta (or Cheez Whiz) over a low heat, and stir until well combined.
  • Mix heated soup and cheese with the broccoli in a 2 qt baking dish.
  • Top with stuffing.
  • Bake for 30 minutes until heated through and top begins to brown.

1 tablespoon butter or 1 tablespoon margarine
4 boneless skinless chicken breast halves
1 (6 ounce) box chicken flavor stuffing mix
1 (10 3/4 ounce) can mushroom soup or 1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1/2 cup milk
1/2 cup shredded cheddar cheese
2 cups cooked vegetables

Steps:

  • Preheat oven to 350°.
  • Heat butter in medium skillet over medium-high heat. Add chicken and cook 12 to 15 minute or until no longer pink. Remove chicken, let cool a bit, then cut in chunks.
  • PrepareE stuffing in skillet according to package directions except let stand 2 minute.

2/3 envelope ranch salad dressing mix
6 cups mashed potatoes (with added milk and butter)
2 medium celery ribs, finely chopped
1 cup sliced baby portobello mushrooms
5 bacon strips, cooked and crumbled
1-1/3 cups shredded Monterey Jack cheese
Chopped green onions, optional

Steps:

  • Preheat oven to 350°. On an ungreased 15x10x1-in. baking pan, bake cubed rolls until toasted, 7-10 minutes. 1 1/2 - 2 lb boneless skinless chicken breast cut into bite size pieces
1 box stove top stuffing mix chicken flavor
1 pkg (8oz.) velvetta cheese (cut in small cubes)
1 can(s) (10.5 oz) campbell's cream of chicken soup
1 bag(s) (14oz.) frozen broccoli florets...thawed and drained
2 Tbsp butter (i use country crock)
salt and pepper to suit your taste

Steps:

  • 1. Preheat oven 400 degrees. Prepare Stove Top Chicken Flavor Stuffing Mix as directed on box...set aside.
  • 2. Melt butter in pan on medium high heat then brown chicken. Add Cream of Chicken Soup and mix well. Stir in the thawed and drained Broccoli. Add the Velvetta Cheese and stir well. Pour "pan cooked" ingredients into a 9x13 butter greased baking dish. Add stuffing on top and spread over ingredients in baking dish. Bake 40 minutes or until chicken is cooked.

12 ounces wild mushrooms, sliced
2 scallions, sliced (white and green parts separated)
1 large shallot, finely chopped
1 tablespoon chopped fresh thyme

1/4 cup brandy (optional)
6 large eggs
2 1/2 cups heavy cream
1 1/2 cups low-sodium chicken or vegetable broth
1 clove garlic, grated
12 cups 3/4-inch cubes stale crusty white bread (about 14 ounces)
1 1/4 cups grated fontina cheese (about 4 ounces)
1 1/4 cups grated sharp white cheddar cheese (about 4 ounces)
1/2 cup chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. Melt 2 tablespoons butter in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until tender and lightly browned, about 6 minutes. Push the mushrooms to one side of the skillet and add the remaining 2 tablespoons butter, then add the scallion whites, shallot, thyme, 1 teaspoon salt and a few grinds of pepper. I personally don't like to put the stuffing inside the chicken, so I bake it in balls,or bake it in a small casserole dish and slice it afterwards, but you can use it to actually stuff the bird if you want.
