1 cup jarred sweet cherries
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon fennel seed, toasted
1 teaspoon kosher salt
1 clove garlic, smashed and peeled
One 3 1/2-pound chicken, cut into 8 pieces
2 tablespoons olive oil
1/2 teaspoon fennel pollen or ground toasted fennel seed

Steps:

  • Combine the cherries, vinegar, mustard, fennel seed, salt and garlic in a blender. Puree until smooth. Place the chicken pieces in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and toss to coat. Marinate in the refrigerator for 2 hours.
  • Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to 450 degrees F or medium-high heat with indirect heat on one side.
  • Remove the chicken pieces from the marinade and place on a baking sheet; reserve the marinade. Drizzle with the olive oil. Place the chicken on the grill over direct heat and cook undisturbed for 4 minutes. Flip the chicken, move to indirect heat and baste with the marinade. Cover the grill and roast until the chicken is cooked through, about 30 minutes. Remove to a platter and sprinkle with the fennel pollen.

1 tablespoon flour
1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
4 boneless skinless chicken breast halves
3 tablespoons butter or 3 tablespoons margarine
1/2 small onion, halved and sliced
1/3 cup chicken broth
2 tablespoons balsamic vinegar
1/2 cup chopped dried cherries

Steps:

  • Combine flour, basil, salt and pepper in large resealable plastic bag; shake to mix well. Add chicken. Seal and shake to coat; set aside.
  • Melt 2 Tablespoon of the butter in a large nonstick skillet over medium-high heat. Add chicken breasts. Place onion around the edges of chicken. Cook chicken for 4 minutes per side to lightly brown; stir onion occasionally.
  • Pour broth and vinegar around chicken. Add cherries to pan. Cover; reduce heat and simmer 4 minutes until no longer pink. Remove chicken to platter; cover to keep warm.
  • Increase heat until mixture bubbles; cook 2 to 4 minutes to reduce liquid, stirring occasionally. Reduce heat to low; stir in remaining 1 Tablespoon butter until blended. Serve chicken with sauce.

1/4 cup balsamic vinegar
6 tablespoons honey

2 cloves garlic, minced
1 teaspoon dried thyme
3/4 teaspoon dried rosemary

2 lbs chicken breasts (4 each skinless, boneless or whatever)
1-1/2 pounds baby red potatoes, quartered
1 pint cherry tomatoes
1 lb green beans, trimmed

Steps:

  • Preheat oven to 425 degrees Fahrenheit. In a medium bowl, combine the balsamic vinegar, honey, a tablespoon of olive oil, garlic, thyme, rosemary, chili flakes, salt and pepper. Stir well to mix. Place chicken breast in a resealable plastic bag and pour the marinade over the top (from step above). Seal and toss the chicken to evenly coat. Marinate for at least 30 minutes if chicken is thawed. Overnight is better. Next place the potatoes and cherry tomatoes in a casserole dish, drizzle the remaining olive oil over potatoes, season with salt and pepper and stir to coat. Put the green beans on top of the potatoes and the chicken on top of the green beans evenly spaced in the dished. Pour the marinade over the casserole dish. Place in 425 degree oven and back 30-45 minutes - depending on how much you have. Based the chicken breast with the pan juices. Use a folk to test the potatoes to be cooked soft enough and taste the green beans for tenderness. The chicken should have an internal temperature of 165 degrees. Allow the chicken to rest for 5-10 minutes. Spoon juices over the top and serve.
