This is one of my favorite and easiest recipes. It is always a hit at parties, bake sales, and pot-lucks. I have modified the original to decrease the fat and calories. It is still delicious.

1 (9 inch) prepared graham cracker crust
1 (21 ounce) can light cherry pie filling
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
⅓ cup lemon juice
1 teaspoon vanilla extract

Steps:

  • Beat cream cheese until light and fluffy. Gradually add sweetened condensed milk, and continue beating until smooth and combined. Add lemon juice and vanilla; mix well.
  • Fill graham cracker crust evenly. Refrigerate until set; this will take between 2 to 4 hours. Just before serving, spread the cherry pie filling over the top of the pie.

1 cup corn flake crumbs
1/3 cup butter, melted
1 (8 ounce) package cream cheese, softened
1 (5 ounce) can Eagle Brand Condensed Milk
1/2 cup lemon juice
1 teaspoon vanilla extract
1 (21 ounce) can comstock brand cherry pie filling

Steps:

  • Mix corn flake crumbs and margarine together in 9" pie pan. Press firmly and evenly over bottom and sides of pan to form crust. Chill.
  • Beat the cream cheese until light and fluffy.
  • Add sweeten condensed milk. Blend.
  • Stir in lemon juice and vanilla extract.
  • Turn into crust. Refrigerate 2 - 3 hours or until firm. (Do not freeze.).
  • Top with cherry pie filling before serving.

1/2 cup butter flavored shortening
2 cups all-purpose flour
3 teaspoons powdered sugar
1/4 cup butter
1/2 teaspoon salt
1 egg
2 teaspoons vinegar
1/4 cup ice water
4 cups drained cherries, juice reserved (recommended: Morello)
1 1/4 cups sugar
3 tablespoons tapioca
Pinch salt
1 1/3 cups juice (reserved from cherries)
Tiny dab red gel food coloring

  • Preheat oven to 425 degrees F.
