CHERRY-MASCARPONE CHEESE DESSERT
This is a delicious dessert - I usually make it with fresh cherries, but canned work just as well. You might want to adjust the sugar amount though, as canned cherries are often sweeter.

Tips:
- Prepare the Crust: Use a pre-made graham cracker crust or make your own by combining graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch pie plate and refrigerate while preparing the filling.
- Use Fresh Cherries: Fresh cherries are best for this recipe, but you can also use frozen or canned cherries. If using frozen cherries, thaw them and drain off any excess liquid before using.
- Cook the Cherries: Cook the cherries with sugar, lemon juice, and cornstarch until thickened. This will help to enhance the flavor of the cherries and prevent them from becoming too runny.
- Use High-Quality Cream Cheese: Use full-fat cream cheese for the best flavor and texture. Soften the cream cheese to room temperature before using to ensure a smooth filling.
- Chill the Dessert: Refrigerate the dessert for at least 4 hours or overnight before serving. This will allow the flavors to meld and the filling to set.
