STRAWBERRY/RASPBERRY/CHOCOLATE CHERRY CORDIAL PIE
I prefer a open top strawberry pie, a top crust detracts from the taste of the berries.

CHERRY CORDIAL PIE
Steps:
- 1. Combine marshmallows and milk in a 2 1/2 qt. glass mixing bowl. Microwave, uncovered, at power level high for 4 to 5 min. or until marshmallows melt and puff. Stir until smooth. Add chopped cherries and liqueur, blending throughly. Let cool to room temp. about 30 min. Fold whipped cream into marshmallow mixture and turn filling into prepared pie crust. Refrigerate for at least 4 hours. Garnish, if you wish, with additional whipped cream and maraschino cherry halves.
Tips:
- For a flakier pie crust, use a pastry blender or two forks to cut the butter into the flour until the mixture resembles coarse crumbs.
- When rolling out the pie dough, be sure to flour your work surface and rolling pin to prevent sticking.
- To prevent the pie crust from shrinking, chill it for at least 30 minutes before baking.
- To make sure the pie crust is cooked through, bake it for 15-20 minutes, or until it is golden brown.
- For a glossy pie crust, brush it with an egg wash before baking.
- When making the cherry filling, be sure to pit the cherries and remove the stems.
- To thicken the cherry filling, add a cornstarch slurry (a mixture of cornstarch and water) to the filling and bring to a boil.
- For a sweeter cherry filling, add some sugar to taste.
- To make the whipped cream topping, be sure to use heavy cream and whip it until it forms stiff peaks.
- For a more decadent whipped cream topping, add some cream cheese or mascarpone cheese.
