Fresh cherries, lime juice, and sparkling water make a very refreshing summer drink!

2/3 cup lime juice
1/2 cup organic cane sugar (or regular sugar)
2 cups Rainier cherries (pitted)
36 ounces sparkling water

Steps:

  • Place the sugar, lime juice, and the pitted cherries in a blender. Blend on high speed until smooth.
  • If you like, you can strain the cherry mixture through a fine mesh sieve, to remove any small pieces of cherries. I didn't do this, and didn't find the bits of cherries bothersome.
  • Divide the cherry lime syrup evenly among four glasses with ice. Pour about 9 ounces of sparkling water into each glass and stir. Top each glass with a cherry if you like.

1 cup sugar
3/4 cup water
1/4 cup plus 2 tablespoons fresh lime juice
4 ounces grenadine
12 ounces club soda, chilled
Lime wheels, for garnish
2 to 4 maraschino cherries, for garnish

Steps:

  • Add the sugar, water and 1/4 cup of the lime juice to a small saucepan. Bring to a boil, stirring until the sugar dissolves. Remove from heat and let cool.
  • Add a few ice cubes to two chilled highball glasses. To each glass, add 2 ounces of the lime simple syrup and 1 tablespoon of the remaining lime juice. Divide the grenadine between the glasses and top off with club soda.
  • Garnish with a lime wheel and 1 or 2 maraschino cherries.

1 cup cider vinegar
1-1/2 cups sugar

  • Finely grate zest from lime. Place zest and cherries in a sterilized pint jar. Bring vinegar just to a boil; pour over fruit, leaving ¼-in. headspace. 0.5 (12 ounce) can frozen limeade concentrate, thawed just a bit (store brand)
