CHERRY LIMEADE CUPCAKES

Cherry Limeade Cupcakes image

After falling in love with the Creamsicle Cake, I've been playing around with different flavors. I wanted to do a cherry limeade flavor and wasn't sure if I wanted to go sweet or tart - so I googled and found this recipe at Baking Up Chaos. The complete frosting recipe is not included, but the baker does tell how she got the cherry flavor.

Provided by Pinay0618

Categories     Dessert

Time 35m

Yield 24 cupcakes

Number Of Ingredients 10

3 cups cake flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter
1 cup sugar
1/2 cup frozen limeade concentrate
2 tablespoons frozen limeade concentrate
3 eggs
3/4 cup plain yogurt (you can use milk, but I think the yogurt adds a nice TANG! to the flavour.)

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Mix together the flour, salt, baking soda and powder and set aside. In a medium sized bowl, cream the butter until smooth then add the sugar and cream together. Once the butter and sugar are creamed add in the limeade concentrate. Mix in one egg at a time. Add in flour mixture 1/3 at a time. When flour is thoroughly mixed, mix in the yogurt. Batter will be slightly lumpy, but should be smooth kind of like pancake batter. Divide the batter evenly into lined muffin tins and bake for about 15-20 minutes. Allow to cool.
  • Once the cupcakes have cooled, poke a few (5ish) holes in the top of the cupcake, not quite to the bottom of the cake. Mix together the remainder of the limeade concentrate (about 3/4 cup) with about 1/2 cup powdered sugar (You can add more or less, depending on how tart you would like your cupcakes to be. I like tart, so I went with about 1/4 cup.) Whisk the mixture well, so there aren't any lumps. Pour about a tablespoon of the syrup over the holes in the cupcake, slowly, so that the syrup absorbs into the cake. You can add more if you like, just go back over the cupcakes a second time if there is any syrup left.
  • For the icing I made a standard buttercream, but I used the maraschino cherry juice in place of the milk and vanilla extract. I added a little extra food colouring to the icing to make it even more pink, but you can make it with just the juice and it is still a delightfully pale pink colour.
  • Keep the cupcakes refrigerated, if only to enhance the flavour. They can be left at room temperature for a day or two once iced, if kept in an airtight container, but I wouldn't suggest leaving them out any longer. They taste best cold!

PARTY TIME CHERRY LIMEADE

Party Time Cherry Limeade image

My Sis, Beth Thomas, co-hosted a large family/friends party for all the high school graduates who attended their church a number of years ago. Our family attended the party since one of Beth's kids was a graduate that year. The main beverage was Cherry Limeade, served in a large punch bowl. We've served this so many times...

Provided by Mary Compton

Categories     Non-Alcoholic Drinks

Time 10m

Number Of Ingredients 4

1 2-liter bottle cherry 7-up, thoroughly chilled
1 12-ounce can frozen limeade concentrate, thawed (do not add water)
1 or 2 jar(s) maraschino cherries with stems, drained
1 or 2 large fresh limes, thinly sliced (amount is really up to you)

Steps:

  • 1. JUST BEFORE SERVING TIME: Carefully pour chilled Cherry 7-UP and limeade concentrate into large punch bowl; gently stirring so the 7-UP doesn't overly fizz up/out. (The key to success in this recipe is for the 7-UP to be completely chilled ahead of time. And actually, you really don't need the limeade concentrate to be completely thawed as it dissolves fairly easily!)
  • 2. Add a few (each) stemmed maraschino cherries and lime slices to the beverage mixture, OR you might want to be creative and make a decorative frozen ring filled with cherries and lime slices...you could freeze with part of the beverage liquid...freeze several days in advance. Few other suggestions: Place remainder of cherries into a small decorative serving bowl...do same with the lime slices...place them next to the punch bowl and punch cups. If desired, have a filled ice bucket next to punch bowl and have guests determine whether or not they want to add the ice.
  • 3. *If you prefer a less tart beverage, you may use one and one-half bottles of Cherry 7-UP to each 12-ounce frozen limeade concentrate ratio. You may double, triple, etc., this recipe to fit your size of crowd and their thirst! This is simple and everyone I've served it to seems to really love it!

CHERRY LIMEADE PIE

Provided by Leah Stacey

Categories     Fruit Desserts

Time 5m

Number Of Ingredients 5

1 8 oz tub of cool whip. thawed.
1 10 oz jar of maraschino cherries ( coarsely chopped)
1/4 c maraschino cherry juice
1 3 oz box of lime jello
1 shortbread pie crust

Steps:

  • 1. Pour 1/4 cup of cherry juice in to a medium bowl (this is the bowl that you will eventually mix all the ingredients in make sure it is big enough)and microwave for about 45 seconds.
  • 2. When the juice is done, pour the lime jello into the cherry juice and mix well. Its ok if it doesn't dissolve.
  • 3. Drain the rest of the cherries and coarsely chop them. I like to use my small food processor for this.
  • 4. Fold in the cool whip with the jello mixture. When that is all incorperated then mix in the chopped cherries.
  • 5. Pour the pie mixture into the shortbread crust. Cover and let it chill in the fridge for about 6 hours or over night. Enjoy

Categories     Beverages

Time 2m

Yield 1 serving(s)

Number Of Ingredients 5

60 ml vanilla vodka
30 ml grenadine
lime, juice of
lemonade, to top up
1 vanilla bean, for garnish

Steps:

  • Half fill a high ball glass with ice, add first 3 ingredients and stir to mix, top up with a generous splash lemonade & place the vanill bean in the drink to serve.

Tips:

  • Use fresh or frozen cherries. Fresh cherries are best, but frozen cherries will work in a pinch. If using frozen cherries, thaw them before using.
  • Add a little bit of lime zest. Lime zest adds a bright, citrusy flavor to the cherry limeade. Be sure to zest the lime before juicing it.
  • Use sparkling water or club soda. Sparkling water or club soda will give your cherry limeade a fizzy, refreshing口感. You can also use regular water, but it won't be as bubbly.
  • Sweeten to taste. Add sugar or honey to taste. You can also use a sugar-free sweetener, if desired.
  • Serve over ice. Cherry limeade is best served cold over ice.

Conclusion:

Cherry limeade is a refreshing and flavorful drink that is perfect for any occasion. It's easy to make and can be customized to your liking. So next time you're looking for a delicious and refreshing drink, give cherry limeade a try!
