TANGY PINEAPPLE MARMALADE

Tangy Pineapple Marmalade image

The horseradish adds a little tang to offset the sweetness. Stir into pulled pork, add a topping to grilled or roasted chicken, fish, or pork, or stir some into fried rice or BBQ sauce. The sky's the limit on ways to serve this.

Provided by lutzflcat

Time 2h15m

Yield 36

Number Of Ingredients 4

1 fresh pineapple
1 ¼ cups white sugar
1 medium lime, zested and juiced
2 teaspoons prepared horseradish

Steps:

  • Peel, core, and cut the pineapple into 1-inch chunks. You should have about 5 cups of fruit. Place the pineapple chunks into the bowl of a food processor and pulse until you reach a texture that would be equivalent to roughly shredded.
  • Combine pineapple, sugar, lime juice, and lime zest in a deep saucepan. Bring to a rolling boil over medium heat. Reduce heat to medium-low, and cook, stirring frequently to avoid sticking, until most of the juice has evaporated, and you reach a marmalade consistency, 50 to 60 minutes. Stir in the horseradish, and if necessary, adjust seasoning to suit your taste.
  • Allow marmalade to completely cool and store in the fridge in a covered jar. The marmalade will firm up as it chills.

CERTO Pearadise Marmalade image

Fresh pears, orange and lemon, canned pineapple, maraschino cherries, sugar and pectin are cooked then processed in a canner for delicious marmalade.

Provided by My Food and Family

Categories     Home

Time 2h

Yield Makes about 9 (1-cup) jars or 144 servings, 1 Tbsp. each.

Number Of Ingredients 8

2-1/2 cups prepared fruit (about 2 lb. fully ripe Bartlett pears)
1 orange
1 lemon
1 can (8-1/4 oz.) crushed pineapple in juice, undrained
1/4 cup chopped maraschino cherries
7 cups sugar, measured into separate bowl (See tip below.)
1/2 tsp. butter or margarine
1 pouch CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Peel and core pears. Finely chop or grind fruit. Measure exactly 2-1/2 cups prepared fruit into 6- or 8-quart saucepot. Remove colored part of peel from orange using vegetable peeler; set aside. Remove and discard remaining white part of peel from orange. Chop fruit, reserving any juice; add to saucepot. Repeat procedure with lemon; add to saucepot. Cut reserved orange and lemon peels into thin slivers, or chop or grind; add to saucepot. Stir in pineapple in juice and cherries.
  • Stir sugar into prepared fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in pectin quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

Tips:

  • Choose ripe and flavorful fruits: The quality of your marmalade will depend on the quality of your fruits. Make sure to use ripe, juicy cherries and pineapples.
  • Prepare your fruits properly: Before you start cooking, make sure to wash and pit the cherries, and peel and core the pineapple. You can also chop the fruits into smaller pieces if you prefer.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the marmalade from burning.
  • Cook the marmalade over medium heat: Cooking the marmalade over medium heat will help to prevent it from scorching. Stir the marmalade frequently to prevent it from sticking to the bottom of the pot.
  • Use a candy thermometer to test the marmalade: A candy thermometer will help you to determine when the marmalade is ready. The marmalade is ready when it reaches a temperature of 220 degrees Fahrenheit (105 degrees Celsius).
  • Process the marmalade in a hot water bath: Processing the marmalade in a hot water bath will help to seal the jars and prevent spoilage. Make sure to follow the instructions in the recipe carefully.

Conclusion:

Cherry pineapple marmalade is an easy and delicious way to enjoy the flavors of summer all year long. With its sweet and tangy flavor, this marmalade is perfect for spreading on toast, scones, or muffins. It can also be used as a glaze for ham or chicken, or as a filling for pies and tarts. So next time you're looking for a unique and flavorful gift to give to friends or family, be sure to try making cherry pineapple marmalade.
