This is a pretty loaf loaded with fruit and tastes good.

2 eggs
1 cup white sugar
½ cup vegetable oil
¾ cup milk
½ teaspoon almond extract
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup dates, pitted and chopped
½ cup candied cherries
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Beat eggs slightly. Beat in sugar and oil. Slowly add milk and almond flavoring.
  • In second bowl put flour, baking powder, soda, and salt. Stir in dates, cherries, raisins, and nuts. Pour into batter, stirring only to moisten. Spoon into greased 9x5x3 inch loaf pan.
  • Bake for 1 hour in 350 degree F (175 degree C) oven until a toothpick inserted in the center comes out clean. After 10 minutes turn loaf out to cool on a rack. Store in plastic bag.

3 tablespoons butter, soften
1/2 cup sugar
1 large egg
1/2 teaspoon almond extract
1/2 teaspoon vanilla
3 tablespoons maraschino cherries, chopped, juice reserved
2 tablespoons cherry juice (maraschino juice)
2 tablespoons orange juice
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In a bowl, beat butter and sugar until creamy. Add the egg, almond extract and vanilla while beating. Add cherries and the juices. Beat to combine everything.
  • Put flour in a small bowl. Add baking powder and salt. Add to the mixture of cherries. Stir just enough to wet the dry ingredients. Pour the dough in a greased loaf pan. Cook in the oven at 350 F for about 45 minutes or until a toothpick inserted in it comes out dry. Cut in 8 slices.

1 jar (6 ounces) red maraschino cherries
2-1/2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2/3 cup milk
1/3 cup butter, melted
1 jar (8 ounces) green maraschino cherries, drained and cut up
1/2 cup chopped pecans
1 tablespoon grated orange zest

Steps:

  • Drain red cherries, reserving liquid; add water, if needed, to liquid to equal 1/3 cup. Cut up cherries; set cherries and liquid aside. , In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the eggs, milk, butter and cherry liquid; stir into dry ingredients just until combined. Fold in the red and green cherries, pecans and orange zest. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. 1-1/2 cups sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon ground cinnamon

1 can (14-1/2 ounces) pitted tart cherries, drained

2 to 3 drops red food coloring, optional

Steps:

  • Line two 9-in. round baking pans with waxed paper. Grease and flour the pans and paper; set aside., In a large bowl, cream butter and sugar until light and fluffy. Yorkshire Tea is a black tea blend produced by Taylors of Harrogate, one of the few remaining family tea and coffee merchants in the UK. The company was founded in 1886 by Yorkshire tea merchant Charles Taylor. Needless to say I drink Yorkshire tea at home in France, I bring boxes and boxes of it back from the UK when I travel there! The Yorkshire Tea Loaf was produced by Taylors as a way of using their Yorkshire tea to expand their range. It involves using the choicest fruits which are infused overnight with the tea. This is my take on their famous tea loaf; moist tea infused fruits really make this loaf something special and it is sublime when served with a traditional English cuppa. Serve this tea loaf in thick slices just as it is - although you could also serve it with butter or with a slab of Wensleydale cheese for that authentic Yorkshire experience. 200 g raisins
75 g currants
75 g glace cherries
425 ml freshly made yorkshire tea or 425 ml tea, of your choice
75 g soft brown sugar
2 eggs
1 teaspoon mixed spice
270 g self raising flour

Steps:

  • Weigh out the currants and raisins and place into a large bowl. Pour on the hot tea, cover the bowl with plastic wrap and leave to steep for 12 hours or overnight.
  • The next day, the fruit will be very plump and juicy looking. Some tea will still remain in the bowl which is fine.
  • Grease a 2 lb. loaf tin and preheat the oven to 150°C / 300°F.
  • Cut the cherries into halves or thirds, depending on size, and add to the soaked raisins along with the sugar and spice. Stir until mostly dissolved.
  • Add the eggs and mix well until evenly combined.
  • Scatter the flour over the surface of the mixture. Using a wooden spoon, start at the centre of the bowl and beat the flour into the mixture, working your way out towards the edge until everything is well incorporated.
  • Pour the batter into the prepared tin and bake for 1 hour and 30 to 40 minutes until golden brown on top and a skewer inserted in the middle comes out relatively clean (it may still be sticky if you hit a raisin).
  • Allow to cool for 15-20 minutes in the tin before turning out onto a wire rack to cool completely.

200g soft unsalted butter, plus extra for the tin
200g golden caster sugar
4 eggs
2 tsp vanilla extract
1 tsp almond extract (optional)
75g glacé cherries, patted dry if in syrup, then quartered
175g self-raising flour
50g ground almonds
½ tsp baking powder
100g icing sugar
a drop of almond extract
1-2 tbsp milk
2 tbsp toasted flaked almonds

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin and line with baking parchment. Beat the butter and sugar together until pale and fluffy, then beat in the eggs one at a time, followed by the vanilla and almond extract (if using).
  • Toss the cherries with 2 tbsp of the flour in a bowl. Tip the rest of the flour, the ground almonds, baking powder and a pinch of salt into the bowl with the sugar and eggs, and mix until just combined. Fold in the cherries and any remaining flour in the bowl. Spoon into the prepared tin and smooth over the top.
  • Bake for 50-55 mins, or until a skewer inserted in the middle comes out clean. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Serve as it is, or mix the icing sugar with the extract and enough milk to make a thick but pourable consistency. Drizzle over the loaf cake, and scatter over the flaked almonds to serve.
