Mix:
1/3 cup masa harina
1/4 cup cornmeal
1/3 cup sugar
1/4 tsp salt
1/2 tsp baking powder
5 tbs butter, softened
1 can creamed corn
1/4 cup water

Steps:

  • Blend butter with a mixer. Add dry mix, beat to combine. Mix in corn and water. Bake at 375 for 1 hour in a 8x8 baking dish in a water bath. Let rest for 10 minutes to set up.

Tips:

  • Use fresh corn. Fresh corn will give your corn cake a sweeter, more flavorful taste.
  • Don't overcook the corn. Overcooked corn will be tough and chewy. Cook it just until it is tender-crisp.
  • Use a variety of cheeses. Using a combination of cheeses will give your corn cake a more complex flavor. Cheddar, Parmesan, and Monterey Jack are all good choices.
  • Add some spices. Spices can help to enhance the flavor of your corn cake. Chili powder, cumin, and paprika are all good choices.
  • Bake the corn cake in a preheated oven. This will help to ensure that it cooks evenly.
  • Serve the corn cake warm. Corn cake is best served warm, right out of the oven. You can also reheat it in the microwave or oven.

Conclusion:

Chi-Chi Corn Cake is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It is easy to make and can be tailored to your own taste preferences.
