This is a main dish that I have served at wedding dinners. It is my all-time best recipe. I serve it with rice pilaf, salad, and French bread.

7 tablespoons butter, divided
1 tablespoon olive oil
8 skinless, boneless chicken breast halves
¼ cup all-purpose flour
1 cup light cream
1 cup chicken broth
¾ teaspoon Morton® Kosher Salt
¼ teaspoon ground black pepper
½ cup grated Parmesan cheese
2 dashes hot pepper sauce
½ teaspoon dried rosemary, crushed
½ teaspoon dried basil
3 cups sliced fresh mushrooms
¼ cup sherry
½ cup sliced almonds, toasted
2 avocados

Steps:

  • Preheat the oven to 350 degrees F. Melt one tablespoon of butter in large heavy skillet. Add olive oil and swirl together with the butter. Add chicken and saute until chicken pieces are browned and juices run clear. Turn pieces to brown evenly while sauteing. Place chicken breasts in 9x13 baking dish and set aside.
  • Melt 4 tablespoons of butter until foamy. Stir in flour, and cook for three minutes, stirring constantly. Slowly add cream and chicken broth. Continue stirring and cooking until smooth and thickened. Season sauce with Morton® Kosher Salt, black pepper, Parmesan cheese, hot pepper sauce and herbs. Set aside.
  • Saute mushrooms in remaining two tablespoons of butter. Add sherry and cook until reduced. Place mushrooms over the chicken. Pour the sauce over the chicken and mushrooms. Bake uncovered for 25 minutes, then sprinkle with almonds, and return to oven for 10 minutes. Peel and slice avocados lengthwise and place over chicken before serving.

3 cups cubed cooked chicken

1 cup panko breadcrumbs
2 tablespoons butter, melted

  • Preheat oven to 350 degrees, F.
  • In large saucepan, melt 1/3 butter over medium heat.
  • Add onion and mushrooms;.
  • cook and stir until crisp-tender, about 5 minutes.

  • Add chicken broth;
  • cook and stir with wire whisk until mixture is smooth and thickened and begins to boil.
  • Remove from heat.
  • Stir in sour cream, chicken and crabmeat and set aside.
  • Peel avocados and cut into chunks;.
  • sprinkle with lemon juice as you work.
  • Carefully fold the avocado into the chicken mixture.
  • Pour into greased 2 quart baking dish.
  • In small bowl, combine panko bread crumbs with melted butter and mix well.
  • Sprinkle over casserole.
  • Bake for 25-35 minutes or until casserole is bubbly and bread crumbs are browned.

1 ripe Haas avocado (the black variety with the pebbly skin)
1 tablespoon fresh lime juice
1 tablespoon finely minced fresh coriander
1/2 cup lump crabmeat
Salt and cayenne pepper to taste
2 egg whites
24 to 30 unsalted tortilla chips

Steps:

  • Preheat broiler. Line a baking sheet with foil.
  • Peel the avocado and remove the pit. Puree in a food processor along with the lime juice and fresh coriander. Transfer to a bowl, fold in the crabmeat and season to taste with salt and cayenne pepper.
  • Beat the egg white with a pinch of salt until they hold firm peaks but are still creamy. Stir one-fourth of the egg whites into the avocado mixture then fold in the rest.

6 tablespoons butter
4 tablespoons all-purpose flour
1 cup light cream
1 cup chicken stock

1/2 teaspoon rosemary
1/2 teaspoon dried basil
1/4 lb mushroom, sliced
1/2 cup almonds, toasted and chopped
1 -2 avocado

  • Preheat oven to 350 degrees. Steam the chicken breasts until tender. Melt 4 tablespoons of the butter until foamy, stir in flour and cook for 3 minutes. 8 ounces medium egg noodles, cooked and drained

4 unblemished, ripe avocados, about 2 pounds
2 tablespoons lemon juice
1 envelope plain, unflavored gelatin
3 tablespoons white-wine vinegar
1 cup mayonnaise, preferably homemade
Salt to taste, if desired
Freshly ground pepper to taste
1/4 teaspoon Tabasco sauce
1 tablespoon Dijon-style mustard
1 teaspoon anchovy paste
1 pound lump crab meat
2 teaspoons corn, peanut or vegetable oil
Tarragon leaves for garnish, optional
Tarragon sauce (see recipe)

Steps:

  • Split the avocados in half and remove and discard the pits. Cut away and discard the skins. Cut the flesh into cubes and put them in a bowl. Add the lemon juice and stir to coat the pieces so that they do not discolor. Set aside.
  • In a small bowl, combine the gelatin and vinegar. When the gelatin is softened, scrape it onto the avocado.
  • Put the avocado mixture and mayonnaise into the container of a food processor or electric blender and blend thoroughly. There should be about three cups.
  • Scrape the mixture into a mixing bowl and add the salt, pepper, Tabasco sauce, mustard and anchovy paste. Blend thoroughly.
  • Pick over the crab meat gently and carefully to remove all trace of shell and cartilage. Leave the lumps as large as possible. Add them to the avocado mixture and fold the crab meat in thoroughly.
  • Brush a five-cup ring or decorative mold lightly on the inside with oil. Wipe out any excess oil.
  • Pour and scrape the avocado and crab mixture into the mold. Smooth over the top. Cover and refrigerate overnight. Unmold and garnish the top, if desired, with a few tarragon leaves. Serve with tarragon sauce (see recipe).
