KIELBASA AND HONEY MUSTARD PINWHEELS

Kielbasa and Honey Mustard Pinwheels image

This is a unique spin (or spiral!) on pigs in a blanket, the classic appetizer that's perfect for any occasion. We've swapped in diced kielbasa for the usual hot dogs, and baked honey mustard into the swirls of puff pastry. The best part: You can assemble the three-ingredient apps ahead of time and then cook them off just before your guests arrive.

Categories     appetizer

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 4

1 sheet frozen puff pastry (half of a 17.3-ounce package), thawed
All-purpose flour, for dusting
1/3 cup honey mustard
8 ounces diced kielbasa (about 1 1/2 cups)

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment.
  • Unfold the puff pastry onto a lightly floured work surface. Using a rolling pin, gently roll the dough out to a 10-by-15-inch rectangle. With a small offset spatula, spread the honey mustard evenly over the dough, making sure to go all the way to the edges, then sprinkle the kielbasa pieces over the mustard.
  • Starting at a long side, roll the dough into a log as you would a jelly roll, then pinch the seam shut and place onto the prepared baking sheet, seam-side down. Refrigerate the log until slightly firm, at least 30 minutes; this will make it easier to cut it into rounds. (See Cook's Note)
  • Cut the chilled puff pastry log into 1/2-inch-wide slices (you should get 20 to 22 slices) and place the slices cut-side down onto the baking sheet. If needed, adjust the slice shape to form a circle. Bake until puffed and golden brown, about 18 minutes. Let cool 5 minutes before serving.

HONEY-MUSTARD CHICKEN TENDERS

Honey-Mustard Chicken Tenders image

The combination of honey and mustard has been around since ancient Egypt and Rome, and midcentury American cooks used it in any number of dishes, from baked chicken to glazed ham. But it wasn't until the 1970s and '80s, when restaurants started pairing the zesty sauce with breaded pieces of boneless chicken, that it became wildly popular. As a coating for chicken, honey mustard not only tastes great, but the acidity in the mustard helps keep the meat juicy. For hot honey mustard chicken tenders, add 1/2 teaspoon cayenne to the honey mustard. For an even quicker dinner, do steps 1 and 2 up to a day ahead. (Refrigerate the chicken and store the toasted panko at room temperature.) Eat the tenders dipped into barbecue sauce, hot sauce, ketchup, or - you guessed it - more honey mustard.

Time 45m

Yield 4 servings

Number Of Ingredients 7

2 cups panko bread crumbs
1/4 cup neutral oil (such as grapeseed or canola)
Kosher salt (such as Diamond Crystal)
3 tablespoons honey
3 tablespoons Dijon mustard
1 1/2 pounds boneless, skinless chicken breasts or tenders
Freshly ground black pepper

Steps:

  • Heat the oven to 450 degrees. Line a sheet pan with parchment paper or foil. Add the panko and oil to the sheet pan, season with 1/2 teaspoon salt, then stir with a fork until evenly moistened. Shake into an even layer. Toast in the oven, stirring with the fork halfway through, until golden brown, 3 to 5 minutes. Pick up the parchment and use it to funnel the toasted panko into a shallow bowl or pie plate. Set aside to cool. (Reserve the lined sheet pan.)
  • In a medium bowl, stir together the honey and mustard. Pat the chicken dry, then pound with a mallet or heavy skillet into an even thickness (about ⅓-inch thick). Slice lengthwise into 1-inch-thick strips. Cut any long strips in half crosswise. (If using chicken tenders, no need to pound or slice.) Season with salt and pepper, then add to the honey mustard and toss to combine.
  • Working with one strip at a time and removing dripping honey mustard, add the chicken to the panko mixture and use your fingers to pack the panko onto all sides of the chicken. (To avoid a big mess, designate one wet hand for touching the chicken and one dry hand for pressing in the panko.) Transfer to the lined sheet pan and repeat.
  • Transfer to the oven and bake, removing from the oven to flip halfway through, until the chicken is cooked through and the panko is browned, 10 to 15 minutes.

EASY PEASY HONEY MUSTARD CHICKEN

Easy Peasy Honey Mustard Chicken image

An extremely easy, quick dish with delicious results all will enjoy! Using wholegrain mustard and sweet honey makes this dish surprisingly mild. Recipe for two people but can easily be adapted for more. Best served with mash (can be made while the chickens in the oven). Minimal prep and most importantly, minimal washing up!

Provided by charlottemaguire94

Time 30m

Yield Serves 2

Number Of Ingredients 6

2 Chicken breasts
Clear honey (good few squirts)
Wholegrain mustard (3 tbsp)
Olive oil (generous squirt)
Mixed herbs (1-2 tsp)
Seasoning (to taste)

Steps:

  • Place two chicken breasts in a deep fill dish suitable for oven cooking
  • In a bowl mix the honey, mustard, olive oil, mixed herbs and season
  • Pour over the chicken breasts, turn the breasts until mixture coats both sides
  • Oven roast at 180 degrees for 25-30 mins. Or until juices run clear. The mixture in the oven dish can be used as a sauce for the chicken breasts.
  • Great served with mash or oven cooked wedges, or a salad for a healthier option.

Tips:

  • For a more even cooking, ensure your chicken breasts are of uniform thickness. You can use a meat mallet to pound them out if necessary.
  • Don't overcrowd the pan when cooking the chicken. This will prevent it from cooking evenly.
  • Be careful not to overcook the chicken, as this will make it dry and tough. Cook it until it reaches an internal temperature of 165°F (74°C) as measured by a meat thermometer.
  • If you don't have a meat thermometer, you can check if the chicken is cooked through by cutting into the thickest part of the breast. The juices should run clear, with no pink in the center.
  • For a more flavorful honey mustard sauce, add a tablespoon of Dijon mustard or a teaspoon of prepared horseradish.
  • Serve the chicken and honey mustard pinwheels immediately, or store them in the refrigerator for up to 3 days. Reheat them in a preheated oven at 350°F (175°C) until warmed through.

Conclusion:

Chicken and honey mustard pinwheels are a delicious and easy-to-make appetizer or main course. They are perfect for parties or potlucks, and they can also be made ahead of time. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your friends and family.
