PARTY WREATH

Party Wreath image

This party-size vegetarian version of a sausage roll takes a bit of inspiration from potato- and pea-filled samosas: The filling is a coarse mash of peas and potato mixed with fresh ginger and green chiles, along with cumin, fennel and sesame seeds. Seasoned with lemon juice and garam masala, it has a tangy, gently spicy flavor that's even more sumptuous when it's wrapped in buttery store-bought puff pastry. Be sure to cut the roll almost all the way to the inner edge before sliding it into the oven, so that the baked pieces are easy to tear away. Serve with green chutney, tamarind chutney, a squirt of Maggi ketchup, or just as is, with a few wedges of lemon or lime on the side.

Categories     appetizer

Time 1h30m

Yield 8 servings

Number Of Ingredients 16

1 medium Yukon Gold potato, peeled and halved
1 (1-inch) piece fresh ginger, peeled
2 serrano chiles, stemmed
2 cups green peas (fresh or thawed frozen)
1 tablespoon neutral oil
2 tablespoons sesame seeds
1 tablespoon fennel seeds
1 teaspoon cumin seeds
1/4 cup fresh mint leaves, roughly chopped
1 teaspoon garam masala
Kosher salt
Lemon juice
All-purpose flour, for dusting
1 (14-ounce) sheet puff pastry (fresh or thawed frozen)
1 tablespoon milk
Green chutney, tamarind chutney or Maggi ketchup, for serving

Steps:

  • Heat oven to 375 degrees. Boil the potato halves until tender, about 15 minutes. Drain and set aside.
  • In a food processor, grind the ginger and serrano chiles until very fine, then add the peas and grind just a little, to get a coarse mash. Tip the pea mixture into a large bowl.
  • In a small pan over medium, heat the oil and add 1 tablespoon sesame seeds, the fennel and cumin, and toast until light golden, about 1 minute. Pour into the bowl with the peas. Add the mint, garam masala and potato, and mix well, breaking up the potato. Season to taste with salt and lemon juice.
  • Working on a lightly floured sheet of parchment paper, cut the puff pastry lengthwise into two equal rectangles, and roll gently with a floured pin to flatten creases. Use your hands to squash half the pea mixture into an even snake of filling down one pastry rectangle, from one end to the other, then roll the pastry lengthwise around it to seal it into a tube, cutting off any overlapping dough and pinching the seam tightly to close. Repeat with the other pastry, then transfer the parchment to a sheet pan.
  • Join the two tubes in a circle, seam sides down. Use a knife to make cuts at an angle every 3/4 inch or so, going all the way through the filling but leaving a bit of pastry still connected in the innermost circle. Pinch and turn each segment to slightly point the filling upward, opening the pieces like petals. Brush the dough tops lightly with milk and sprinkle with the remaining 1 tablespoon sesame seeds.
  • Bake for 45 minutes, or until the pastry is completely cooked through and golden brown. Serve warm or at room temperature, with green chutney, tamarind chutney or Maggi ketchup.

CHICKEN AND SAUSAGE HOLIDAY WREATH

Chicken and Sausage Holiday Wreath image

The idea for the crescent roll wreath actually came from a Pampered Chef party many years ago, but the filling is mine. Around the holidays I decorated it with fresh sweet basil leaves and pieces of sweet red pepper to give it a holiday look. It really is an appeitzer that impresses, and ssshhh don't tell anyone, but it is made out of leftover ham, chicken, turkey, any kind of meat you have left over. The combo we like the best is chicken and sausage.

Number Of Ingredients 15

2 teaspoon(s) vegtable oil
6 ounce(s) bulk pork sausage, i use the breakfast kind
8 ounce(s) cream cheese, softened
7 ounce(s) leftover chicken diced, or use the pouch if you don't have leftover chicken
1/4 cup(s) each green pepper, and sweet red pepper
3 medium scallions, chopped, green parts too
1 to 2 medium jalepenos seeded, and diced
6 ounce(s) grated swiss cheese
6 ounce(s) grated mozarella cheese
6 ounce(s) water chestnuts, diced
1/4 cup(s) marzetti slaw dressing, or your fav
1 to 2 teaspoon(s) worchestershire sauce
1 to 2 teaspoon(s) hot sauce, or to taste
- salt and pepper to taste
2 can(s) crescent rolls

Steps:

  • Heat oil in a skillet, add sausage, and cook until no longer pink.
  • In a large bowl combine everything except crescent rolls.
  • Cover and chill for at least 1 hour.
  • Pre heat oven to 375°
  • Use a pizza pan that has been lined with aluminum foil (no clean up) Spray liberally with pam before you start.
  • If you use a pizza pan for this it will be easier to keep it in the round. Arrange the crescent rolls in a circle, long pointy ends facing out, short fat ends overlapping on the pan.
  • Put the filling evenly all around the wreath on the widest part of the dough. A disher works great here.
  • Fold the long pointy end back over the filling in the wreath, tucking in a little at the center.
  • Not all the filling will be covered, that's what you want.
  • bake for 20 minutes until golden, and expect to hear WOW when you bring it out. This never fails to impress.

CHICKEN AND SAUSAGE HOLIDAY WREATH

Chicken and Sausage Holiday Wreath image

This is made with crescent rolls and leftover chicken, or you could use leftover ham, or even leftover any kind of meat. It is an appetizer with wow Factor, yet is easy to put together. For this I did use a 7 ounce chicken breast in the pouch, but leftover chicken works just as well. My friend Dana came over just as I was taking this out of the oven. I said "Hey girl wanna be my guinea pig?" When she saw it she said "Wow" This would be a perfect partner to my sparkling cranberry punch.

Categories     Poultry Appetizers

Number Of Ingredients 14

8 ounce(s) cream cheese, softened
7 ounce(s) cooked chicken or cooked ham
1/4 cup(s) each red and green pepper, chopped
1 to 2 medium jalepenos, seeded
3 medium scallions, chopped green part too
6 ounce(s) swiss cheese, diced
6 ounce(s) mozarella, grated
6 ounce(s) water chestnuts, chopped
1/4 cup(s) marzetti slaw dressing
1/2 teaspoon(s) each salt and pepper
1 to 2 teaspoon(s) worchestershire sauce
1 tablespoon(s) vegtable oil
6 ounce(s) pork sausage
2 can(s) crescent rolls

Steps:

  • In a large mixing bowl combine everything but sausage, oil and crescent rolls.
  • In a sauce pan heat the oil and cook the sausage until browned and cooked through, add to chicken mixture.
  • Cover with plastic wrap and refrigerate at least one hour to give the flavors a chance to marry.
  • Preheat oven to 375 degrees
  • Use a pizza pan for this step, it helps you keep the round shape.
  • Unroll the crescent rolls. Arrange in a circle with the long pointy end facing out, and the fat sides overlaping.
  • Spoon filling mixture on the widest part of each triangle. You will use about 3 rounded tablespoons per scoop. I use a disher for this.
  • Fold the long pointy end back over the filled wreath and tuck under a little to seal in the center. Your filling will not completely be covered, that's just perfect that way.
  • Bake for 20 minutes, or until golden and bubbly

Tips:

  • To easily shred the chicken, use two forks to pull it apart.
  • If you don't have a baking sheet, you can use a large oven-safe skillet instead.
  • Be careful not to overcook the chicken or sausage, as this will make them dry and tough.
  • If you want a crispier crust on the wreath, brush it with melted butter before baking.
  • Garnish the wreath with fresh herbs or a sprinkle of cheese before serving.

Conclusion:

With its festive appearance and delicious flavor, this chicken and sausage holiday wreath is sure to be a hit at your next party or gathering. It's easy to make and can be tailored to your own taste preferences. So get creative and have fun with it!
