CHICKEN AND SAUSAGE JAMBALAYA WITH OKRA

Chicken and Sausage Jambalaya with Okra image

This is an easy recipe that has never let me down. I sometimes use shrimp instead of chicken, which is another tasty option. Just be sure to add the shrimp near the end of cooking time so it doesn't overcook. You might want to start with less than the recommended 1/8 teaspoon cayenne if you are very sensitive to it.

Yield 6 serving(s)

Number Of Ingredients 21

2 tablespoons canola oil
1 1/2 cups sausage, cut into slices
1 cup red bell pepper, finely chopped
1 cup green bell pepper, finely chopped
1 cup yellow bell pepper, finely chopped
3 cups onions, finely chopped
2 cups celery, finely chopped
2 bay leaves
2 1/2 cups chicken breasts, chopped
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 1/2 teaspoons jalapeno peppers, finely chopped
1/4 teaspoon black pepper
1/8 teaspoon red pepper
3 garlic cloves, minced
1 (15 ounce) can diced tomatoes (do not drain)
1 (15 ounce) can chicken broth
1 1/2 cups basmati rice
1 cup green onion, thinly sliced

Steps:

  • Heat oil in a large Dutch oven over medium-high heat. Add sausage; cook about 8 minutes, stirring occasionally.
  • Add bell pepper, onion, celery, and bay leaves; cook until vegetables are golden brown, stirring occasionally.
  • Add chicken and next 8 ingredients (through garlic); cook 4 minutes, stirring occasionally.
  • Add diced tomatoes and broth, and bring to a boil. Stir in rice.
  • Cover, reduce heat, and simmer 20 minutes. Discard bay leaves. Stir in green onions.

Tips:

  • Choose the right rice: Long-grain rice, such as basmati or jasmine, is best for jambalaya because it absorbs the flavors of the other ingredients without becoming mushy.
  • Use a variety of meats: Chicken and sausage are classic jambalaya ingredients, but you can also add shrimp, crawfish, or even duck.
  • Don't skimp on the vegetables: The holy trinity of onions, celery, and bell peppers is essential for jambalaya, and you can also add okra, tomatoes, and corn.
  • Use a flavorful broth: Chicken broth or seafood broth is a good base for jambalaya, and you can also add white wine or beer for extra flavor.
  • Season the jambalaya well: Creole seasoning, paprika, garlic powder, and cayenne pepper are all common spices used in jambalaya.
  • Cook the jambalaya until the rice is tender: This will usually take about 20 minutes, but it may take longer if you are using a different type of rice.
  • Serve the jambalaya with your favorite toppings: Chopped green onions, parsley, and hot sauce are all popular options.

Conclusion:

Chicken and sausage jambalaya is a delicious and versatile dish that is perfect for any occasion. With its flavorful broth, tender rice, and variety of meats and vegetables, jambalaya is a surefire crowd-pleaser. So next time you're looking for a hearty and satisfying meal, give chicken and sausage jambalaya a try.
